Community Accent Wednesday, July 6, 1983 Stevens Point (Wis.) Journal 6 Grill more than hot dogs, hamburgers MENOMONIE Lamb's quarters, cattail sprout salad or sumac tea might be among more traditional barbecue fare at a meal prepared by the outdoor cooking class at the University of Wisconsin-Stout. "We want to give students a broad exposure to all kinds of outdoor cooking," explains Anita Pershern, class instructor. And a wide range of outdoor cooking is what they get: foraging for and cooking wild plants and fruit, using outdoor solar ovens, trying out a wok on the barbecue grill and cooking a pizza on the grill. "Just about anything that can be cooked indoors can be done on the grill," says Ms. Pershern.

In to using a solar oven to make gingerbread and casseroles, the class plans outdoor menus for backpacking trips, large barbecues and even renaissance meals. One item planned for backpacking is fruit leathers. Ms. Pershern offers a recipe for pineapple leather which she says is especially good. More traditional cooking is offered during a "fish lab." Students learn different ways to cook and serve fish as well as other foods.

Ms. Pershern suggests fish stuffed with rice, flavored with lemon, chives, thyme and butter. The rule with fish on the grill, she said, is about 10 minutes per inch of thickness. Fish is done when it is opaque and flaky. Ms.

Pershern said many people are becoming interested in raw fish. Trout is fine for this purpose she said, but pike and perch both have a parasite and should not be served raw. "Don't just limit yourself to brats and hamburgers on the grill," Ms. Pershern said. "It's fun to experiment with a wide variety of foods from breads to serts." Here are some recipes used in the class.

Fish Bake 13-pound lake trout or other whole fish cup celery cup green pepper 4 tbs. butter or margarine lemon juice cups herb flavored croutons Two-thirds cup water salt cup barbecue sauce Cook celery and green pepper in butter till -crisp. Toss with croutons and water. Season fish cavity with salt. Brush with lemon juice.

Stuff fish. Place on aluminum foil. Brush with cup of the barbecue sauce. Seal foil. foil wrapped fish in wire basket.

Cook over moderately hot coals about one hour, turning occasionally. Turn back foil, brush with 1 remaining barbecue sauce. Cook 15 minutes longer or until fish flakes with fork. Northern lb. Northern fillets green pepper, sliced 1 small onion, sliced 2 Tbs.

The bride, a 1975 graduate of Iola High School, plans to graduate from North Central Technical Institute, Wausau, in December with a degree in marketing. She is employed at Scandinavian Design, Wausau. The bridegroom, a 1970 graduate of Rosholt High School, is a 1975 graduate of the University of Wisconsin-Stevens Point with a degree in sociology, psychology and education. He is manager of Eastbay Running Stores in Wausau and Stevens Point. Pre-nuptial events included a shower given by the bride's sisters and mother at the bride's home.
