Set them in an earthen baking dish with a little water in the bottom and place in the oven and bake until the tomatoes are tender but not broken. Serve with a border of rice or mashed potatoes. Grilled Tomatoes. These are nice for breakfast, lunch or a dinner entree. Choose large, firm tomatoes, cut a small slice from each end and then cut them in half; do not peel them.

Brush them with a little melted butter; season with salt and pepper and broil them over a clear bright fire for twenty minutes, turning them carefully. Serve on thin slices of toast with cream sauce poured around them. Potato Salad. Nothing is more refreshing than a salad in warm weather. the liquor with the meat and turn it into the mould. Place it immediately on ice to harden. Cut in slices and serve each slice on crisp lettuce leaves with a salad. Pressed Beef. In England this is a stand-by for breakast in warm weather.

The thick flank is preferred to the thin as it is not so fat and sometimes the brisket is used. Take a piece of nine or ten pounds and have the bones removed (these may be used for broth or soup.) Have your butcher salt it if not-convenient to do it yourself. It will require ten days or two weeks to salt it properly. Wash the meat quickly in com water to free it from roll it up as tightly as possible and bind securely with a tape. Put it in a stew-pan with enough, lukewarm water to cover it, add an onion and a bay leaf, bring it gently to boiling point, skim the liquor and then draw the boiler bacK and let the meat simmer gently until tender, allowing 20 minutes to every pound.

Take it up, lay it on a disa, put another dish on top with a heavy, weight on top and let it remain under pressure all night. The next morning the meat may be trimmmed neatly and glazed with the reduced liquor in the stew-pan, a silver skewer put through it and garnished prettily and it will make a very attractive dish for the dinner or luncheon table. More seasonings and spices may be used if desired; this will give you spiced beef. Veal Loaf. Chop' Zlk pounds of uncooked veal and pound of raw ham very fine; add 1 cup of bread crumbs, 1 tea-spoonful of salt, 1 teaspoonful of onion juice, y2 teaspoonful of pepper.

tea-spooniul of sage, teaspoonful of teaspoonful of allspice and two eggs well beaten. Mix all thoroughly together and pack into a square mould or pan. Turn the pan upside down on a buttered baking pan, brush the veal loaf well with beaten egg and place in a moderate oven and bake slowly for two hours, basting frequently with melted butter or meat glaze.
