If so, find out just how good heart-healthy food can be by attending the Cooking Lite: "South of the Border" presentation sponsored by the American Heart Association and Salina Regional ^ Health Center. ' A registered dietitian will address ways to add variety and flavor to a diet that is low in fat and sodium. You will learn to: • Take original Mexican recipes and modify them to lower the sodium, fat and ^ cholesterol. • Use cooking techniques that will reduce fat (i.e., rinsing of ground beef, and using non-fat cooking spray instead of excess fats and oils when frying foods). • Substitute low-fat/non-fat ingredients for high fat ingredients in recipes. • Modify recipes using fresh ingredients versus processed and canned. • Replace the sodium in recipes with herbs and spices. • Identify the risk factors associated with heart disease and stroke.
