Hints From Heloise TV Trays Ease Breakfast Traffic By HELOISE CRUSE Dear Heloise'. I have learned an entirely new way to eliminate the traffic and chaos in my kitchen . when it comes time to cook breakfast! I use my TV trays. I remove them from the legs and line them up on the drain- board. I fix each tray as though I were working in a hospital. I then set the TV frays on the dining room table. As each of the six children and my husband finish their break ast they pick up their entire tray and carry it to the kitchen and set it back on the drainboard. They remove their plates and rinse them out and put them in the sink. The best part of it is that Mother does not have to walk from the dining room or breakfast room table ten times after each meal. This saves wear and tear for a tub of colored, white, or clothes to be bleached, without having to dump them out and resort them. Beth Touchton Dear Heloise: Would you like to know a surefire method for keeping cut flowers fresh twice as long? Simply add an aspirin! Another trick that I learned from our florist is this: When you cut flowers, dip the tip of the stem in boiling water and then arrange the flowers in the vase. They will keep longer. One of her recipes is for Orange Bowknots. They are described as "fragrant with fresh orange and Orange Icing and so airy they almost fly away. Orange Bowknots 1 pkg. active dry yeast or 1 cake compressed yeast % c. water 1 c. milk, scalded % c. shortening 1-3 cu. sugar 1 tsp. salt 5 to 5% c. sifted enriched flour 2 beaten eggs 2 tbsp. grated orange peel % c. orange juice Soften active dry yeast in warm water or compressed yeast in lukewarm water. Combine hot milk, shortening, sugar and salt. Cool till lukewarm; stir in about 2 c. flour and beat well. Add eggs; mix well. Stir in softened yeast. Add orange peel, juice, and remaining flour (or a little more or less to make soft dough). Cover; let rest 10 minutes. Knead dough 8 to 10 minutes on lightly floured surface until smooth and elastic. Place in lightly greased bowl, turning once to grease surface. Cover and let rise in warm place until double in bulk, about 2 hours. Roll dough in 18 by 10-inch rectangle % inch thick. Cut strips 10 inches long by % inch wide. Roll each strip back and forth lightly inside your fingers; tie in loose knot. Arrange on greased baking sheet. Cover and let rise till almost double, about 45 minutes. Bake in hot oven (400 degrees) 12 minutes or until, done. Makes about 2 dozen. Ice with Orange Icing. .Orange Icing Blend 1 tsp. grated orange peel, 2 tbsp. orange juice and 1 c. sifted confectioners sugar. Brush icing on with a pastry brush for a smooth even glaze Mrs. Bosworth says these meat balls have the true Italian flavor, which is achieved with use of spices and sugar. She uses the blender to mix the egg, and green pepper. She freezes a dish of the meat balls with sauce. Then it's a simple matter to cook spaghetti and have it all ready in short order. Italian Meat Balls 2 Ib. hamburger 4 eggs 3 tbsp. Parmesan cheese 1 onion 1 green pepper 1 tsp. salt pepper to taste 2 c. cracker crumbs Blend meat, eggs and chopped vegetables with seasonings and mix thoroughly. Shape balls about the size of a walnut and brown in fat in a skillet. Put in pan with 1 quart tomatoes, which are bubbling hot. Add 2 tsp. nutmeg and 2 tsp. cinnamon (more or less, according to taste) and 2 tbsp. Parmesan cheese. Sim mer slowly for a time then ad( 2 cans tomato paste. Simmer sev eral hours. The secret of the good flavor is partly in the long slow cooking. Serve over spa ghetti boiled in salted water anc drained. About all that is needed to com plement the meat balls are French bread sliced, spread with plain or garlic butter, and heated, anr combination salad. For the salac dressing Mrs. Bosworth likes tc use 4 tbsp. sugar, 2 tbsp. vine gar, salt and pepper. Mix and let stand. She does not use am sugar that may sink to the bo! torn. Add to salad at the las minute. I often serve this Dish One," says Mrs. Bosworth. "It is just what the name implies; it's easy to make and everything one needs is right there in it." Dish In One 2 Ib. hamburger 1 chopped onion 1 tsp. salt pepper Brown in pan over slow fire and drain off fat. Add 1 can undiluted tomato soup. 3 or 4 carrots, diced, and two or more medium potatoes diced. It may need more water added. Just before mealtime drop in some dumplings, leaving some space between them. Cook them 20 minutes. You may use biscuit mix or make them from 1 tsp. baking powder, 1 c. milk, % tsp. salt and flour their lives they have begun to appreciate "Mother." I do not recommend this for dinner. Dinner is the time when we give blessings and eat leisurely. It's our time for conversation and exchange of ideas. But for' breakfast, trays are the only answer. The next recipe came down to ilrs. Bosworth from her grandmother. Creamed Tomatoes 1 quart tomatoes 1 tsp. soda 1 tbsp. butter salt, if needed % tsp. pepper 3 tbsp. sugar 2*/6 or 3 tbsp. cornstarch Bring tomatoes to a boil, add oda and seasonings. After foam- ng has stopped add butter. Mix dry sugar and cornstrach together and add to tomatoes. Cook until the mixture thickens and add Team as desired. Have you ever tried steak with Iressing? If you once taste this dish you'll want it often. Steak With Dressing 1% to 2 Ib. round steak 2 c. bread crumbs ! /4 c. celery, chopped 2 eggs 1 can mushroom soup milk, about 1 c. Mix crumbs and all ingredients except soup and steak. Put he mixture on half the steak and bring the other half over it, fasten- ng with toothpicks. Dissolve a little butter in a pan. Flour meat and brown in the pan. Pour soup over the meat and simmer until done. For a change in jello salads, here is a bright, flavorful one which couldn't be simpler. Cherry Red Hot Salad 1 box cherry jello Vi c. red hots small can crushed pineapple 1 c. boiling water 1 c. liquid, pineapple juice plus water Dissolve red hots in boiling water and add cherry jello. Add the other cup of juice and water and the pineapple. Applesauce may be substituted for the pineapple. Do you like kraut? Try it by this Dutch recipe from Mrs. Bosworth's grandparents. Just open a can of kraut, cook and season with bacon fat or any preferred seasoning. Drop in dumplings on the top and cook. Alma Dear Heloise: I suggest that women be good to themselves. For just a few dollars one can buy spongy foam rubber mats (they come in assorted sizes) to prevent your legs from aching after long hours of standing. . . especially if you have tile over concrete floors. If you want to buy only one mat, move it from place to place . . . from the floor in front of the sink to the counter, the stove, to the ironing board, and so forth, wherever needed. This is particularly nice for those who have rheumatism or weak muscles in their legs. They are such a help and relieve so much strain. Mrs. Lee Anderson Dear Gals: This woman is exactly right. I have tried this method and now I would not trade my cushion mat for anything. It is especially good when washing dishes or ironing. Heloise Dear Heloise: To save wax and time, use an old wet mop to wax all floors. It goes on smooth and even. Wash mop in warm soap water when through. Rinse and let dry. All of the wax will come out. 33 Attend Senior Club The Senior Club meeting yesterday in Youth Center began with a patriotic ritual with 33 members present. Mrs. Myrtle Graham read an article, "Bread of Life," followed by the Lord's prayer. After the business session anc songs by the members, Henry Smart gave a vocal solo and Mrs. Graham and Mrs. Lillian Spears a vocal duet. Mrs. Margaret Williams was accompanist. For entertainment members gave readings, clippings and Irish jokes. Guests were Mr. and Mrs George Cordle of the Oaklant Senior Slub, Topeka. Mrs, Cordle read a poem, "Farewell," writ ten by Owen Oyler, a member ol the Oakland Club. Refreshments were served by Mrs. Flora Sherman, Mrs. Gra ham and Mrs. Spears. Naomi Club Luncheon Hosting a luncheon for Naomi Hub yesterday wiith Mrs. 0. L. Jreckenridge at her home were tfrs. Adam Wicke, Mrs. Ben lolmes and Mrs. H. H. Feuer- x)rn. Mrs. W. L. Pickering presided and Mrs. Lee Shobe led deyo ions. Members gave Irish jokes for roll call. They made 35 large cancer dressings and six small ones, For Franklin County Chapter, American Cancer Society, and made knee robes and bibs for the IOOF- Rebekah home, Manhattan. Mrs. Feuerborn received the door prize. The group contributed to the Hattie Boucek memorial fund of First Baptist Church. It was announced that Mr, and Mrs. 0. L. Breckenridge and Mrs. Lyle Enyart formed the serving committee for the Rebekah meeting Wednesday evening.
