CHBHALIS. WASHINGTON THE CHEHALIS BEE-NUGGET, FRIDAY, MAY 3, 1929 PAGE 9 The Egg Is the Keystone of Cookery Of all the food products, it is the greatest boon to the housewife. In support of this assertion, we cannot do better than to quote that eminent French chef, noted for sagacity and wonderful mastery of French cookery, who, in speaking of the humble egg said: "All cookery rests on an egg. The egg is the Atlas that supports the world of gastronomy, the chef is the slave of the egg. What is the masterpiece of French cookery, the dish that outlives all other dishes, the thing that is found on his majesty's table no less than upon the table of the bourgeoise--the thing that is as French as a Frenchman, and which expresses the spirit of our people as no other food could express Omelette.

Could you make an omelette without breaking eggs? Then cast your mind's eye over this extraordinary monsieur egg and all his antics and evolutions. Now lie permits himself to be boiled plain, and even like that, without frill, naked and in a state of nature, he is excellent. Now he consents to appear in all ways from poached to perdu, now he is the soul of a vol-au-vent, now of a sauce; not a piecrust fit to eat but stands by virtue of my lord the egg, and should all the hens in the world commit suicide tomorrow every chef in France worthy of the name would fall on his spit, for fish is but a course in a dinner, the egg is the cement that holds all the castles of cookery together." From all the great variety of products from which the busy housewife can choose the evening meal, quickly prepare the early morning breakfast or put together a. delicious dish for dinner, nothing has greater possibilities from the standpoint of ease of preparation, economic efficiency and nutritive value than eggs. LET US HELP MOTHER, AND INCIDENTALLY OURSELVES, BY INSISTING ON HAVING MORE EGGS TO EAT.

Gopher Control Remedy. Leo E. Couch, federal rodent control expert with headquarters at Olympia, is studying plans of combat- ting pesky gophers that infest the Grand Mound district. Wonder if he ever heard of a gopher control movement carried on with huge success in Cheyenne county, Nebraska, near Sidney 44 years ago by a group of small boys. Part of the gang would carry a large can of water; fruit cans.

One lad would hold an empty can over one hole of the gopher's home; another would pour water into the hole at the opposite end of the runway. Bing-and a gopher would shoot up into the small can where he was promptly imprisoned for the later amusement of the boys engaged in this method of Play. Poultry Business Pays. C. J.

Tent Caterpillar Busy.

The tent caterpillar has already appeared in Skagit and other counties of the northern district in western Washington. Fortunately southwest Washington escaped the visitation, but if anyone notes the appearance of the pest this season the horticultural officers at the courthouse should be immediately advised, so that effort may be made to combat it.
