Cooking Magic: Cornmeal Popovers By CECILY BROWNSTONE i Associated Press Food Editor Some of our friends use some of their spare time to dream up new ways to make old dishes taste extra-good. We had never happened on a jopover made with cornmeal until we tasted the combination at a friend's house. She Made hers in an electric blender and substituted a quarter cup of cornmeal for a quarter cup of flour in a standard recipe. But cooks cannot leave well enough alone! We found you could substitute as much as one-third cup cornmeal for a bit more of that old-southern flavor. To do this we use three eggs, rather than the usual two called for in a standard popover recipe. If you use only two eggs, the popovers will probably have too many moist layers inside and won't puff really high. Because there's a high proportion of liquid to flour in a popover recipe, the batter can be beaten thoroughly without toughening the hot bread to any appreciable extent. Should popovers be put into hot pans, as old-fashioned recipes direct, or into cold, as modern recipes suggest? Take your choice. Experts in experimental cookery say the temperature of the pans makes little difference in the finished product. Make sure your popovers are thoroughly baked and that they feel firm when you take them from the oven. Rush them to the table, we beg you, so they can be eaten — slathered with butter— wfeile they're still deliriously crisp. CORNMEAL POPOVERS A LA EMMIE LAW 2-3 cup sifted flour 1-3 cup enriched yellow cornmeal 3 large eggs 1 cup milk 1 tablespoon salad oil Sift together the flour, cornmeal and salt into a mixing bowl. Add the eggs and milk. Beat with a rotary beater (hand or electric) until smooth; with electric beater at medium speed this will take 1% to 2 minutes. Add the oil; beat % to 1 minute. Bake in a very hot 475 degrees) oven 15 minutes; reduce heat to moderate (350 degrees) and bake until golden- brown and quite firm to the touch — about 35 minutes. Remove from cups at once and rush to the table. Serve with butter. Family Visits Houseguests for a few days at the home of Mrs. A. K. Rader, 412 Willow, are her son and family, Lt. Commander and Mrs. Jack B. Rader and children, Lee Mark and Milissa. Mr. Rader will sail Jan. 18, on the USS Constitution, for a 2- year tour of duty in the Mediterranean, and will be attached to the staff of the Commander of the 6th Fleet, on the flagship USS Springfield. The family will live near Monaco. The Rader family is also visiting his aunt, Miss Nelle Buchanan, and his sisters, Mrs. Max P. Alderman and Mrs. Allen Loyd, and families. To the strawberry juice add enough cold water to make % cup; gradually stir into cornstarch in a small saucepan, keeping smooth; stir in corn syrup. Cook and stir constantly over moderate heat until clear and thickened; cool. Fold in drained berries. Refrigerate until serving time. Makes about 1% cups.
