Bar cookies range from delicate, layered bite- size pieces to be served at an afternoon tea, to hearty lunch box squares that are chunky with chocolate chips and nuts. Cookie bakers who are pressed for time appreciate the no-fuss steps in making bar cookies. Most varieties are mixed in one bowl, poured, into a pan and popped into the oven for a short baking period. They are also a simple baking project for children who enjoy "helping out" in the kitchen. Bar cookies made with sweetened condensed milk are even faster and easier because this creamy blend of milk and sugar eliminates preparation steps, making it today's easy way to make homemade-good snacks and desserts. Double Chocolate Fantasy Bars will satisfy even the most fanatical chocolate lover. The twice-as-good flavor of chocolate is provided by a chocolate cake mix and chocolate chips melted with the sweetened condensed milk. ;Kids will hurry home when they know that Peanut Butter Snackin' Bars are the after-school snack. Double Chocolate Fantasy Bars 1 package (18V« or 18% oz.) . chocolate cake mix ; Vt cup vegetable oil legg 1 cup nuts, chopped 1 can (14 oz.) sweetened ' condensed milk 1 package (6 oz.) semi-sweet chocolate chips 1 teaspoon vanilla extract Dash salt : Preheat oven to 350 degrees. In large mixer bowl, combine cake mix, oil and eggs; beat on medium speed until crumbly. Stir in nuts. Reserving 1% cups crumb mixture, press remainder on bottom of greased 13x9- inch baking pan. In small saucepan, combine remaining ingredients. Over medium heat, cook and stir until chips melt. Pour evenly over prepared crust. Sprinkle reserved crumb mixture evenly over top. Bake 25 to 30 minutes or until bubbly. Cool thoroughly. Cut into bars. Store loosely covered at room temperature. Makes 36 bars. Peanut Butter Snackin' Bars 1 can (14 oz.) sweetened condensed milk 1 cup peanut butter legg Vi cup water IVfe teaspoons vanilla extract Wz cups biscuit baking mix 1 package (6 oz.) semi-sweet chocolate chips % cup peanuts, chopped Preheat oven to 350 degrees. In large mixer bowl, beat sweetened condensed milk, peanut butter, egg, water and vanilla until smooth. Add biscuit mix; mix well. Stir in chips. Spread evenly in 13x9-inch baking pan. Sprinkle with chopped nuts. Bake 30 to 35 minutes or until wooden pick inserted near center comes out clean. Cool. Cut into bars. Store tightly covered at room temperature. Makes 36 bars. QuickXJranola Cookie Bars % cup margarine or butter 1*6 cups graham cracker crumbs 1 cups raisins Vz cup sunflower meats legg 1 can (14 oz.) sweetened condensed milk % cup quick-cooking oats 2 tablespoons orange juice 1 teaspoon ground cinnamon 1 cup walnuts, chopped Preheat oven to 350 degrees. In 13x9-inch baking pan, melt margarine in oven. Sprinkle crumbs evenly over margarine; top with raisins then sunflower meats. In medium bowl, beat egg; add sweetened condensed milk, oats, orange juice and cinnamon. Mix well. Pour evenly over sunflower meats; sprinkle with nuts.
