bowl of fluffy rice vlth tiny pieces of pineapple nixed in it served with fried riam steak Just try that com-lnatlon of flavors Mr Salmon one of the best men on the development of the middle South says rice is no longer Just a southern specialty He thinks the new packaged pre-cooked rice has made It a menu staple in American homes everywhere today Here is one of the recipes he gave me for the packaged pre-cooked style of rice a definite labor and worry saver Chicken livers with Bice (Makes 5 or 8 Servings) One -quarter cup butter 3 tablespoons finely chopped onion lft cups packaged precooked rice 1ft cups water 1ft teaspoon salt 1 box (8 ounces) quick-frozen' chicken livers thawed (if desired ft-pound fresh chicken livers may be used) seasoned flour 1 can (10ft ounces) condensed cream of chicken soup ft cup milk 1 tablespoon chopped parsley Melt 1 tablespoon of the butter in sauce pan Add onion and cook until tender but not brown Add rice water and salt Mix Just until all rice is moistened Bring quickly to a boil over high heat uncovered fluffing rice gently once or twice with a fork (Do j'S' (': not stir) Cover and remove from heat Let stand 10 minutes Meanwhile separate chicken livers and dry between towels Cut into 1-lnch piece- and roll In seasoned flour coating lightly Melt remaining butter in skillet add chicken livers and saute 3 to 4 minutes or until lightly browned Remove from heat Add soup milk and parsley to rice and heat thoroughly Add chicken livers Mix lightly with a fork Turn Into greased lft-quart baking dish Bake In moderate oven (375 degrees F) 10 minutes Tomorrow's Menu Breakfast: Canned figs ready-to-eat cereal scrambled eggs with parsley enriched toast butter or margarine tart Jelly coffee milk Luncheon: Toasted bacon and cheese isandwlches stewed tomatoes rye bread butter or margarine baked apples tea milk Dinner: Fried ham steak pan gravy fluffy rice with pineapple buttered Swiss chard enriched bread butter or Ruebhausen represents her class of 1937 at Alumnae Council She previously worked as program secretary for New York State League of Women Voters did research in the administration of government for the
