APPETIZER RICE BALLS 1 (4 ounce) package precooked rice 3 tablespoons butter 3 tablespoons all-purpose flour 1 teaspoon salt Vi teaspoon ground white pep-' per teaspoon cayenne pepper Yi teaspoon dry mustard 1 cup milk lYt cups finely grated sharp Cheddar cheese .1 teaspoon Worcestershire sauce. 1 teaspoon grated onion 1 egg 2 cups dry bread crumbs Prepare rice according to pack-. age directions. In saucepan, melt butter. Blend in flour, pep-' per, cayenne and dry mustard.

Gradually add milk, stirring constantly over low -heat 'until very thick. Add cheese, Worcestershire sauce and onion. Add rice; chill. Shape into 1-inch balls. Dip each ball in slightly beaten egg; roll in bread crumbs.

Deep fry at 375 de- -grees for about 2 minutes or until golden brown. Drain on paper towels and serve. Makes about 5 dozen. The'Hero recipe here serves 12: but you can add or subtract quan- titles to fit the size of your video bite-sized quiche, or a carrot stick or two, than to snack on, say, messy crab dip or awkwardly served pasta in sauce. Sensible snacks may not be fun, but they will be appreciated.

Pair a couple of rich nibble foods with some calorie-conscious ones. Still, dont skimp on quantities: Movies have a way of bringing out a giant-sized hunger in the average eater.
