In Perfection Parfaits, a thick chunky sauce of chopped fresh nectarines and marmalade is alternated with scoops of chilly lemon sherbet and, for the older generation, streaked with streams of green creme de menthe or ruby-dazzled with grenadine for the young. Cool, refreshing and light, parfaits of fresh nectarines may be prepared and frozen ahead, leaving only the serving for the busy chef, who can concentrate on grilling the steaks or tossing the salad. For added brilliance in the parfaits, leave the bright ruby-blushed skin on the nectarines. The thin, tender skin adds a bit of tang to the marmalade-fruit sauce and the tart-sweet flavor of fresh nectarines balances nicely with the sherbet leaving the taste buds tingling at the end of the meal. Double or even triple the recipe when you're expecting a crowd and impress them with the perfection of your selection of a dessert. Serve with chilled, long-handled spoons so every perfect drop of the cool parfait may be savored. PERFECTION PARFAITS 2 fresh nectarines Vs cup lemon or Nectarines sweeten creamy summer treat A sweet tooth never takes a vacation but it takes special pampering in the summertime. And it gets it, from the first blushing nectarine of the season to the last crimson and gold globe. The fresh nectarine has just the right balance of sweetness and •tang to refresh and satisfy from the first snappy bite through the thin, tender skin, to the last clinging drop of juice. Eaten right out of. hand, a fresh nectarine is a heavenly dessert — but, if you want to hear angels sing, slice a few nectarines into slim, juicy crescents and arrange them in a pretty pattern over a strawberries-and-cream filling between layers of an angel cake. Bake your own or pamper yourself and buy an angel cake at your favorite bakery. Split the cake into two layers or, if you're really trying to be impressive, buy a large, towering cake and split it into three, or even four layers. Mix the cream with brown sugar, add the strawberries and spread atop each layer. Spiral the nectarine slices around the top of each stack and assemble .carefully. Put your heavenly masterpiece together early in the day. It is much better chilled, and the slicing is easier. Use a thin bladed knife to cut Nectarine Angel Cake, and keep the pieces small. Even the most dedicated sweet- toother will find the combination of fruit and light, fluffy cake highly orange marmalade Lemon sherbet Green creme de menthe or grenadine syrup Slice nectarines thinly from pits; chop coarsely Combine with marmalade. Spoon half the nectarines into parfait glasses. Top with half the sherbet. Repeat layers. Drizzle with creme de menthe. If desired, garnish with nectarine slice. Makes four parfaits. Nectarine satisfying in small servings. NECTARINE ANGEL CAKE 4 or 5 fresh nectarines 1 pint whipping cream '/2 cup light brown sugar 1 pint strawberries sliced 1 (9-inch) baked ange food cake Thinly slice nectarine from pits. Whip cream with brown sugar until stiff. Add strawberries Angel Split cake crosswise into two layers. Spread with ."strawberry cream.^ Arrange nectarne slices over cream. Stack layers. Chill well. Makes one cake (9-inch) 10-12 'servings. Cook shares red velvet cake recipe This prize winning recipe is by Darlene 0'- Keefe. RED VELVET CAKE Vfe cup shortening 2 eggs 2 tablespoons cocoa Vz cup sugar 2 ounces red food coloring 1 teaspoon salt 1 teaspoon vanilla 1 cup buttermilk 2'/2 cups sifted cake flour 1% teaspoon baking soda 1 tablespoon vinegar Cream shortening and sugar well. Add eggs and beat. Make a paste of cocoa and red food coloring. Add to creamed mixture. Mix salt, vanilla, buttermilk together. Alternately add flour and the buttermilk mixture to creamed batter. Mix baking soda and vinegar together then fold this into batter by hand. DON'T beat anymore! Bake in two 9 inch layer cake floured pans, 30 minutes at 350 degrees. (Note: for a fancy torte look, use four 9 inch pans, dividing the mixture into four layers.) Frosting: Make white sauce of cup milk and 5 table spoons flour, heat unti it thickens, stirring con stantly. Cool to room temperature. While the above is cooling, bea together: l cup butter and 1 cup sugar; add 1 tablespoon vanilla. When white sauce ha_ cooled (will separate on cake if not cooled properly) add sauce to butter • sugar mixture beating thoroughly. Refrigerate until ready to serve.
