In a week, all the beer must go when Palace patrons gather to say goodbye to their early-morning watering hole. After that, the regulars say they don't know where they'll meet for what they call "choir practice." They talked about owner Chuck Wallis' hospitality, the softball teams and the annual turtle races. BAR from B1 A potluck POLISH PALACE and goodbyes, and making all the beer go The menu continues to be rendered in Polish, with English translations. Among the choices are kielbasa (Polish sausage) for $3.25, wolowina (beef) for $4 and szynka (ham) for $3.50.

Cheese is an extra 30 cents. Next Saturday there will be a potluck and a long day of goodbyes during which all the beer must go. "It will be like cutting off my right arm, but it's something that had to be done," said owner Chuck Wallis, 57. He said that a heart condition forced him to sell, but that for now he still comes to work each day. Regulars reminisce The patrons on the bar stools on a recent weekday afternoon say it's been so long that they can't recall how many years they've been coming to the Palace.

They talk about the extensive Christmas decorations Wallis put up every year and the annual turtle races, which were being held this weekend. The trophies on a shelf testify to all of the softball and bowling teams the bar sponsored over the years. "Chuck is what made this bar," said Rod Larson, of Blaine.

Tim Smith, also of Blaine, agreed. "He didn't treat anybody any differently, whether you're young or old. He always remembers your name and your drink. And he doesn't raise prices like everybody else." While they talked about Wallis, he remained discreet until the end, refusing to tell his favorite tales collected over the years. "Oh, God, no!" he said.

"I'll get in trouble for that." But he did recount the time three years ago when his hospitality landed him in trouble. The bar was known as an early-morning hot spot for postal and law enforcement workers looking for a drink after their overnight shifts. "I used to get here at 6:30 a.m., so I'd let them in about 7:15 a.m. when it was cold," Wallis said. But bars can't serve until 8 a.m., and soon a city inspector was at his door.

"When he walked in, I had 40 people in here and it was 10 to 8 Wallis said with a chuckle. New owners, new look It's unlikely that the new owners will be as much a part of the bar as Wallis, although two of them James Rosenberg and his wife, Christine Bravo live just to the north in a historic, restored house. Rosenberg said that while the bar has been a good neighbor, he and his partners Dave Wischmeier and the firm Sheba Inc. hope to reclaim its history. No name has been chosen for the new bar, but under consideration is a nod to the building's heritage.

German immigrants founded the bar in 1883 as the Thies Hotel and Sample Room. At one point, the Gluek's Brewery was located just south of the building in what is now a park. Rosenberg said it will remain primarily a bar, with a full liquor license, but he also intends to expand the menu, serving sandwiches, soups and salads. "There are 18 other bars that are pretty much like the Palace, if you still want a place that doesn't have windows and is smoky," he said. Of the menu, he said, "We're going to really try and stay away from anything that you have to deep fry." Minneapolis City Council Member Joe Biernat represents the area and welcomes the changing guard.

"It's a win-win for the community in that we have a local resident becoming an owner and further establishing his roots in the community. I just think it's going to be a big success," Biernat said.
