WxlneadaT Afternoon, FArupfy 9. 1949 JEFFERSON CITY POST-TRIBUNE To Lessen frailty Scientific Study Proves That You Can Eat Your Way To Strength, Health; Americans Well Fed NEW YORK, Feb. 9-- We can eat ourselves into a physically stronger nation. And good eating can lessen human frailty. Although parents have been promoting such ideas for countless years by prodding youngsters to clean their plates so they'll grow up to be strong, it took a year-long investigation in human nutrition to prove, at last, that parents have the right idea.

The study, first of its kind ever 'inade, was undertaken by Pennsylvania State College to find out with scientific accuracy if better eating could raise the physical well-being of a group of American families already in the well- fed class. Sixty-four families were studied. Their incomes ranged from $2500 to $7000 a year. There were 239 persons between ages of 15 days and 74 years. Most of adults had a high school edu- or better.

They all had comfortable homes The college and Westinghouse Electric jointly put up S150.000 for the investigation, led by Dr. Pauline Beery Mack, director of the Ellen Richards Institute of the college, and Mrs. Julia Kiene, director of the company's home economics institute. i Dr. Mack has won recognition! for her work in mass nutrition conducted by Pennsyl- "vania State College and the Department of Health of the Commonwealth of Pennsylvania.

Mrs. Kicne is noted for her Westinghouse Health-for-Victory program of nutrition adopted in more than 1700 war plants. Their study followed these basic steps: 1. They gave each of the 239 Individuals a medical, dental and nutrition test. This physical check-up was repeated in six and again at the end of the year.

2. They planned master menus for each family, based primarily on the physical and nutritional needs of the individuals in it. As far as consistent with good nutrition, the menus were based on the family's general eating preference or traditional eating habits. They then sent in a corps of experts to show not only how to cook the food but also how to Itbuy and store it. Initial checkups showed that the families under study were getting too little food, poorly chosen, cooked by haphazard methods that destroyed much of its nutritional value.

The use of sea foods, of variety meats such as liver--particularly--and kidneys, 'and of dark bread had beet, stepped up. The use of milk and cheese had been increased 24 per cent, the juse of green and yellow vegetables 24 per cent, of potatoes nine per cent, of fruits and other vegetables nine per cent, of cereals and related products 21 per cent, and of fats 30 per cent. Cooking methods were improved. Before the experimental period ended the subjects discovered, first, that they liked foods they thought they didn't; and, second, that they enjoyed eating more--because, as doctors know, appetite increases with the habit of eating. At the end of a year, the final check-ups showed a marked decrease in-irritability and fatigue, as well as generally improved body tone.
