Don Ryan is almost as much a St. Paul institution as the landmark Lexington restaurant at 1096 Grand where he greeted patrons from 1936 until he retired as general manager a year ago. Turns out, not surprisingly, that Ryan missed his old customers.

He confessed that fact to Rick Webb, who bought the place last year, and the result is that Ryan is back in place as greeter and sort of all-around friend every Sunday from 4 to 8 p.m. Folks who remember Betty Grable and Marilyn Monroe may not think of Goodfellows chef Tim Anderson as a subject for calendar art, but they're wrong, sort of. Anderson is one of 12 individuals from around the country whose work is pictured on the Great Chefs of America 1992 calendar. In fact, his ragout of lobster and shrimp with spicy vegetable puree and whipped potatoes is on the cover. The calendar is published by Share Our Strength, the hospitality-industry charity that provides substantial funds for food shelves and other organizations that feed the poor.

Anderson is active in the organization. He'll be teamed with former Vikings bench warmer Bob Lurtse-ma at the Jan. 25 Taste of the NFL at the International Center on the edge of downtown Minneapolis Jan. 25. In that event, 28 chefs and 28 retired pro football players will get together to cook.

Ticket buyers may wander and sample at will. Tickets are $75 per person, with all proceeds going to Share Our Strength. Tickets are available from Bob Spelts, Super Valu Stores Box 990, Minneapolis, Minn. 55440. A TOUCH OF SPRING Edo de Waart, conductor Joseph Kaikhsthn, piano Mbsday, Jan.

Boyd, Martin and executive chef Sam Ma are former colleagues at the Sheraton Ritz and the IDS building's 50th-floor restaurants, Physical changes in the restaurant are minor and designed to soften the feel.
