The unbleached flour sales increased 35 percent in 1971 compared with 1970 sales. A revival of home baking and cooking and a trend toward natural foods are believed to account for the sales increase. In keeping with a distaste for artificial products of all types, young homemakers pass up fluffy, white, mass-produced bread in favor of coarse-textured whole wheat and pumpernickel loaves.

Though it always has been a part of the Peavey line, the unbleached flour never has been promoted. Selmer Rodning, Peavey vice-president for grocery-products sales, said promotion of the unbleached flour would put it "at odds" with the firm's bleached flour. Compared with white bleached flour, both the unbleached and specialty flours are a small factor in the business. Rodning declined to release either sales or manufacturing statistics in discussing the increased sales of special flours. "The interest (in unbleached flour) has really been amazing," said Rodning.

He said that over the last year the King Midas Old Style flour distribution had spread from a small area in Wisconsin to parts of Minnesota, then to North Dakota, South Dakota and Montana. Until the recent spurt in interest it was for older homemakers that the five flours had been kept in Peavey's product line. Older bakers used the flours for traditional foods, often with ethnic origins. Now some homemakers don't know what todo with these flours. Inmost cases they can be used interchangeably in recipes calling for all-purpose flour.

Peavey expects to promote the use of the flours through recipe booklets. In contrast to the specialty flours which are dark and which are most frequently combined with molasses and brown sugar for dark breads, the unbleached old style flour is light, cream-colored. Bleaching, which Peavey and other millers began in the 1920s, was done to produce the fine white breads which the culture at that time demanded. Both the bleached and unbleached flours are enriched with vitamins and iron to meet Food and Drug Administration requirements. Peavey's unbleached flour is about to appear in the Twin Cities in a new flower-sprigged package.

Both the unbleached and the specialty flours are marketed in 2- and 5-pound packages. Flours milled and marketed by Peavey no longer" are bromated. Potassium bromate formerly was added in a quantity not exceeding 50 parts per million. The bromate had an oxidizing effect which improved the baking qualities.
