Dandy for a luncheon or supper dish. Try placing the bacon on the cheese waffles the same as on the By EVELYN OREM, Baltimore, Md. IF THIS was a theme on cookery I would most likely entitle it "The Bride's Waffles," or perhaps "The Evolution of the Waffle." But it is just a friendly letter to my best friend, "The Housewife's Food Almanack." The slightest occasion to serve refreshments to friends or relatives in our humble home offers an excuse to bring forth our well-used waffle iron and plug the cord into the most convenient, outlet.

Breakfast, luncheon, dinner or even a midnight supper, serves the purpose for someone to shout, "Let's have waffles." So waffles It is! Plain waffles, cheese waffles, bacon waffles, graham waffles, fruit waffles, waffles of all description. My family and my friends never seem to tire of them. But there was a time when my husband "never wanted to look another waffle in the face." I used a standard recipe I found in a recipe book and the waffles that came out of my iron, I'll ad-, mlt, weren't so "hot." They were heavy and tough, not light and crisp as I had dreamed of serving them to my new young husband. Naturally, I wanted to make use of my culinary possession, so, day after day, alone in my apartment, I lunched on waffles. I twisted and turned that old recipe around until I found the right consistency to suit me.

Then I served waffles for breakfast. I held my breath until the frown disappeared from the face of the "man of the house." The frown turned to a smile and( he gorged himself "Tis truly said "The way to a man's heart is by way of "hia stomach." For he kissed me that morning and whispered, "You've got something there, Baby." So now, after ten years of trying to keep "my man" well fed and happy, running a home on depression wages and mothering a red-headed imp of a boy and his lovely blonde sister, the same old waffle iron comes down from its shelf several times a week to take its place of honor on the kitchen table. The waffles that come off its grids are the direct descendants of the great pioneer "The Bride's Wafflet," but you'd hardly recognize, the resemblance. Gam DISSOLVES THE GREASE THAT CAUSES 90 OF THE SCOURING AND SCRUBBING YOU DO com waffles. They're good that way, too.

1 With hunting season here, the following is a very special recipe we all enjoy. SQUIRREL AND WAFFLES Cut up the squirrel in pieces for serving and lay in salted water for 3 hours. Wash well and place in a saucepan with hot water barely covering. Let boil up quickly, to retain the juices, then simmer until tender. There should be about half the amount of water left.

Add 1 cup sweet cream, 1 ounce butter, salt and pepper to taste. Simmer for a few minutes, then thicken slightly, Serve with crisp, hot waffles, made at the table. FRUIT WAFFLES To standard recipe add cup sugar, 1 cups diced peaches, V4 teaspoon vanilla. Or Va cup sugar, 1 cups diced apples, teaspoon cinnamon. Serve with powdered sugar sprinkled on top or sliced fruit and whipped cream.

Intelligent women know that success in this role depends first of all on food delicious food, beautifully prepared and temptingly served.
