Bring this mixture to a boiling point and add the softened gelatin and stir until dissolved. Add a small amount of the hot mixture to three beaten egg yolks and then add the remaining hot mixture. Cook over low heat for approximately three minutes.

Cool and add one tablespoonful grated lemon rind and one-half cup of crushed pineapple. Beat three egg whites with one-quarter cup of granulated sugar and fold the gelatin mixture into the stiffly beaten whites and. pour into the pie shell.
