For Southlanders who like a dish to cook indoors and carry out to Ihe patio, this is a good one. A secret of its flavor is a pinch of saffron, Arroz con Polio is presented today with the addition of chicharos (peas). The recipe: Arroz con Polio y Chicharos I tablespoon salt y 2 teaspoon basil ! /i teaspoon oregano '/ teaspnon pepper 1 medium clove garlic, minced 1 teaspoon vinegar y 3 cup olive oil (or cooking oil) 1 3-pound frying chicken, quartered or cut into serving pieces 1 cup coarsely chopped onion I cup coarsely chopped green pepper can (I pound) tomatoes (about 2 cups) cup finely chopped ham (about 2 ounces) medium bay leaf pinch saffron (less than y$ teaspoon) 2 cups water 1 package (4% ozs.) precooked rice 1 package (10 ozs.) frozen green peas, partially defrosted Mash first five ingredients together. Add vinegar and 1 tablespoon oil; brush over chicken pieces. Heat remaining oii in covered fry pan or electric skillet. Brown chicken on both sides in hot oil. Add onion, tomatoes, ham and hay leaf; cover and cook slowly until chicken is tender; about '10 minutes. Remove chicken from pan and keep waim. Add water, rice, saffron and green peppers to tomato mixture. Arrange peas around edge of pan; cover and simmer just until rice is done, 5 to '10 minutes. Return, ctiicken to rice and serve. Yield: 4 to G servings.
