One package o f ' a new lemon chip angel food cake mix is prepared according to package directions and 3 cups of it baked in a jelly roll pan--15% x l(Hi inches. .(A jelly roll pan holds only half of the batter; so Â·make two rolls--or bake the other half in a layer or loaf pan or as'cupcakes.) Lemon Chip An^el Cake Koll with Cocoa, Cream Filling 1 package lemon chip angel food mix "i Cocoa Whipped Cream __ . Prepare cake mix as directed on package. Spread all but 3 cups of the batter into a 15'/4x 10%xl-inch-jelly roll pan, which has been lined on bottom with paper. Bake in moderate oven (375 F.) about 20 minutes, or until cake springs back when pressed lightly with finger. Cool in pan 10 minutes. Then turn out on towel sprinkled with sifted confectioners' sugar, ' remove paper; roll up, rolling cloth in cake. Cool thoroughly- about 1% hours. When cool, un roll, remove cloth and spread with Cocoa. Whipped Cream. Then roll up again. Frost top and sides with, any favorite '' frosting,, and decorate with shaved chocolate, or sprinkle with confectioners' sugar. Chill. Make S .to 10 servings. Spread the remaining 3 cups of batter into an ungreased Sinch round layer pan or Sx4x3- inch or 9xox3-inch loaf pan or spoon into'12 baking cups set in muffin pans. Bake in moderate oven (375 degrees F.)'about 20 minutes. '(Bake cupcakes about 15 minutes.) Use plain or frosted for another dSssert. Cocoa Whipped Cream 2 tablespoons cocoa 3 tablespoons sugar i/ 5 teaspoon salt 1 cup heavy cream Mix together cocoa, sugar and salt. Add cream gradually, s t i r r i n g to keep mixture smooth. Chill 1 hour. Then'whip until stiff. Makes 2 cups, or enough 'to spread between two 9-inch layers 'or to fill jelly roll. The Institute points out, "That 27 per cent saving represents a-great deal of money when translated into volume building and the truly outstanding fact is that fireproofing is substantially increased."
