Cranberry brunch' pancakes 2 cups packaged pancake mix 2 cups milk 2 eggs 2 tablespoons butter, melted '£ cup chopped pecans I V. cups sugar 3 tablespoons cornstarch 1% cups orange juice 2 cups fresh cranberries 1 large orange, peeled and sectioned For pancakes, add mix, milk, eggs, and butter to bowl. Stir lightly till batter is almost smooth. Stir in nuts. For each pancake, pour V4 cup batter onto hot, lightly greased griddle. (A M i - c u p measure m a k e s this easy). Turn pancakes when tops are covered with bubbles and edges look cooked. To serve, top with sauce made by combining sugar a n d cornstarch in saucepan. Slowly stir in orange juice. Add cranberries; cook and stir till thick and c l e a r and cranberries start to burst. Stir in orange sections and bring back to boiling. Makes 8 servings. -Hot spiced tea- % cup sugar 20 whole cloves Cinnamon stick, broken into pieces 7 tea bags Vz cup orange juice Vi cup lemon juice Orange and lemon slices In a medium saucepan bring 2 quarts water to a boil; add sugar, cloves and cinnamon; bring to a full rolling boil, stirring until sugar dissolves. Remove from heat and at once add tea bags. Cover tightly and let stand 4 minutes. Strain into casserole set on a warmer or large (12 cup) carafe. Stir in fruit juices. Garnish with orange and l e m o n slices. Serve in cups or mugs. Makes 12 to 14 servings. Big meat pies for big hungry guvs!
