April », IJCT-U DESSERTS APRICOT NECTAR CAKE Mrs. Orval Thompson Route 1 Bentonville Ark. 1 pkg. lemon cake mix 1 pkg. lemon Jello (dry) # cup apricot nector % ctip oil 4 whole eggs % teaspoon vanilla Mix well cake mix and jelto. Add apricot nector, oil, eggs, vanilla and mix well. Pour into well greased and floured stem pan. Bake at 350 degrees for 50 minutes to 1 hour. Topping: While cake is baking, mix 1 cups powdered sugar and % cup apricot necior. Remove cake from pan when baked punch holes all over with Ice pick. Pour sugar-nector mixture over cake. 1 3 3 1 'A 3 VINEGAR PIE Sharon Tryon Route 2 Berry ville. Ark. 2 cups boiling water /4 tsp. salt cup sugar this, flour. eggs tsp. lemon flavoring cup vinegar this, sugar Beat egg yolks until thick. Add 1 cup sugar, flour and salt. Mix well. Add water slowly, stirring constantly. Add vinegar. Cook over hot water until thick and smooth. Add flavoring. Pour into baked pastry shell. Cover with meringue made of egg whites and 3 this. sugar. Put 2 cups in a large pan, save the % cup of wafers. Mix well 1 can pineapple (drain off the juice), yolks of I eggs, 1A cups sugar, cook S minutes. Then add 1 pkg. lemon Jello, set aside. Then whip 1 can Carnation milk stiff. Mix altogether and pour over c r u s h e d wafers, on top put a thin layer of crushed wafers. Chill until set. Ark. 3 cups white sugar 1 cup sweet milk 1 cup shortening 3 eggs 1 teaspoon lemon oil 4 teaspoon baking ammonia 1 teaspoon salt flour Pour Vi cup boiling water over ammonia, let set to dissolve. Mix all ingredients. Now add enough flour to make a soft dough. Pat the cookie dough in a large baking pan and prick it with a fork all over the top. Bake in 350 degree oven for 35 minutes. Remove from oven and cut into squares. Baking ammonia may be purchased at drug stores under the name of Ammonium Carbonate in small cubes that dissolve in the boiling water. CHOCOLATE PASTRY CAKE Mrs. Manuel Flores, Jr. 2024 Austin Drive Fayetteville, Akr. 2 4 oz. pkgs. semi-sweet cooking chocolate H eup sugar 'A cup water l'/a Up. instant coffee I tap. vanilla 1 9 - 1 0 - oz. pkg. pie-curst mix (2 sticks) 2 cups whipping cream In saucepan, combine chocolate, sugar, water and instant coffee. Cook over low heat, stirring constantly until smooth. Add vanilla. Cool to room temperature. Blend % cup of the chocolate sauce into pie-curst mix; divide pastry into 6 equal parts. Press each part over bottom of an inverted 8 x VA inch round cake pan to within '/z inch of edge. (Do in relays according to the number of pans you have.) Hake in hot oven (425 degrees) 5 minutes or until done. If necessary, trim layers to even the edges. Cool; then run the tip of a knife under edges of layers to loosen. Lift off carefully. Whip cream until it just begins to hold soft peaks. Fold in the remaining chocolate sauce. Stack baked pastry, spreading chocolate cream between layers and over top.
