TOUj, April », tt» DESSERTS PECAN COOKIES a' la MODE Mrs. William Danforth Kt 1 Box 157 Lincoln, Ark. 1 1 02. package chocolate pudding and pic f i l l i n g mix '.i cup of sugar 1 cup flour 1 teaspoon baking powder ',2 teaspoon salt 2 eggs, separated VJ cup milk ',; cup melted butter or margarine 1 cup chopped pecans vanilla ice-cream 1 Sift together, in a large bowl, t h e pudding mix, the sugar, flour, the baking powder and the salt. 2. Separate the egg whites and the yolks. Beat the yolks and add the milk to them. Stir the egg yolk mixture and melted butter into the dry ingredients. Add the pecans (or use English walnuts if you wish). 3. Start the waffle iron heating. 4. Beat the egg whites until stiff and fold them into t h e butter. 5. Bake in waffle iron and serve at once with vanilla ice- cream. Makes 6 servings. Add shortening and applesauce. Beat 2 minutes more. Blend in fruit, nuts, and eggs. Bake in greased 8x12x2 inch pan at 350 degrees for 55 to 60 minutes. Frosting Bring to boil in saucepan: ',-. cup butter, % cup brown sugar. ',4 tsp. salt and 3 tblsp. milk. Cook 1 minute. Remove from heat; add % tsp. vanilla and Hi cups walnuts. Spread over cake. Cut in squares and top with vanilla ice cream. STRAWBERRY PIE Mrs. Donald F. Weaver Rt. 2. Box 182 Prairie Grove, Ark. 1 quart large, firm ripe stra%vberrics 3 tablespoons cornstarch Vz cup water 1 tablespoon lemon juice (or realemon) 'A teaspoon salt 1 cup sugar red food coloring (optional) 1 baked S" or 9" pic shell % cup whipped cream, more or less (optional) Wash and stem strawberries. Mix half of berries with cornstarch and water. Crush. Add lemon juice, salt and sugar. C o o k , stirring constantly, until mixture thickens (about 5 min.) Sometimes at this point, due to variances in berries, the addition of some red food coloring enhances the appearance of the product. Cool. Add rest of berries to cooked mixture and pour into baked pie shell. Cool. Spread with whipped cream or topping if desired. Refrigerate until ready to use. PEPPERMINT FROZEN DESSERT Bunny Jo Carr Summers. Ark. 3 cups vanilla wafers -Ti cups butter Hi cup powdered sugar 3 eggs 3 squares unsweetened chocolate 1U cups whipping cream 1 8 oz. package miniature marshmallows Vi cup peppermint candy Blend together crumbs and '/4 cup melted butter; press firmly in bottom of greased 8 inch square pan. Cream together butter and sifted sugar. Add eggs and melted chocolate. Beat until light and fluffy. Spoon o v e r crumbs. Set in freezer while whipping cream. Fold m a r s h m a l l o w s into whipped cream and spread over chocolate layer, sprinkle with crushed candy-garnish w i t n additional whipped cream. If desired freeze.
