Tltl*T, », DESSERTS APPLE CREAM CRUMBLE PIE Mrs. Matt Holtzen, n 826 Highland Fayetteville, Ark. pastry for 10 inch pie (unbaked) S large baking apples 2 tbls. lemon juice ft cup sugar for filling (more for very tart apples) I tbls. Hour for filling % tsp. nutmeg Vt tsp. cinnamon % cup sugar for topping Vi cup flour for topping 1 stick butter for topping 1 cup whipping cream Pare, quarter and core apples; then halve each quarter crosswise (about 7 cups). Place in large bowl and sprinkle with lemon juice. Mix Vi cup sugar, 2 tbls. flour, nutmeg, and cinnamon in cup; sprinkle over apples, tossing to coat well; spoon into prepared shell. Combine ',i cup sugar and J /i cup flour in small bowl, cut in butter until crumbly, sprinkle over apples. Cover pie loosely with foil and place on large cookie sheet Bake in o v e n (425 degrees) for 1 hour; uncover and drizzle 'A cup cream over; bake 15 minutes longer or until top is golden. Remove pie from oven and drizzle remaining Va cup cream over. Cool about 1 hour or until filling is set. APPLE SAUCE CAKE Mrs. Malcolm Lawrence 740 Putman Fayetteville, Ark. 2 cups flour 1 cup sugar Vt cup shortening or oleo l',4 cup sweetened apple sauce 2 teaspoons soda Vt teaspoon salt 1 reaspoon cinnamon and allspice Yi teaspoon cloves 1 cup raisins Do not beat ingredients only stir until well blended. Mix all dry ingredients well a n d dredge raisins in some of this mixture. Cream sugar and oleo together, add apple sauce, then flour extra mixture. Cook at 350 degrees for 45 minutes or until done. Shells Vi cup margarine Vt cup sugar 2 egg yolks 1 teaspoon almond extract 2 cups flour Filling Vt cup margarine % cup dark Karo syrup 1 cup confectioners sugar 1 cup chopped nuts To prepare shells, cream margarine and sugar together. Stir in egg yolks, almond extract and flour. Stir until mi* ture is smooth and cleans sides of bowl, (stirring should bt done by hand not with mixer). Pinch off 1 inch balls of dough. Shape into muffin pans (the 2 inch size muffin pans). Do not make crust too thick. Bake in 400 degrees (hot) oven for 8 to 10 minutes or until edges are brown. Prepare filling: Bring margarine, Karo syrup and sugar just to boil, sitr occasionally. Remove from heat. Stir in nuts. Cool slightly. Fill baked shells with mixture. Set oven to 350 degrees and bake cookies 5 minutes. Cool completely. Remove from pans. Makes 3* . cookies. SUGAR COOKIES Bessie Howard 1374 Paradise Lane, Rt. 7 Fayetteville, Ark. Vt cup shortening (Cnsco) Vt tsp. salt 1 cup sugar 2 eggs well beaten 2 tbsp. sweet milk 2 cups flour 1 tsp. baking powder % tsp. soda 1 tsp. vanilla Cream shortening, sugar and salt, add eggs and milk. Sift Hour baking powder and soda and add to the above mixture. Drop by teaspoonsful on to cookie sheet. Dampen bottom of glass and put in sugar, flatten out cookies. B a k e at 350 degrees about 8-10 minutes. Makes about 4 dozen. SOUR CREAM APPLE PIE Ruby Anderson 15 Palmer Ave. Fayetteville, Ark. 5 large tart apples 1 pastry-lined 9 inch pie pan 1 tablespoon lemon juice }i cup granulated sugar Vi cup flour Vi teaspoon salt 1 teaspoon cinnamon Vt teaspoon nutmeg % cup 0/2 stick) butler or margarine Vt cup dairy sour cream Peel and cut apples into slices. Arrange slices in overlapping rows in pastry-lined pie pan; sprinkle with lemon juice. Mix sugar, flour, salt, cinnamon and nutmeg; cut in butter until crumbly; spoon over apples. Spread sour cream over top. Bake at 400 degrees for 25 minutes; reduce heat to 350 and bake until apples are tender (about 20 to 25 minutes longer). SALT PORK CAKE Bertha McChristian Beedeville, Ark. 1 Ib. ground salt pork 1 egg 1 tablespoon cloves 1 tablespoon nutmeg 6 cups flour 1 pint boiling water Vi cup sorghum molasses 1 tablespoon soda 1 cup walnuts or pecans 1 cup raisins 4 cups sugar 1 tablespoon cinnamon Pour boiling water o v e r ground pork and raisins l e t stand until luke warm. B e a t egg and syrup together, add to pork, water and raisins after becoming luke warm. Sift together all dry ingredients, add to above.
