IK-lt Main Course Dishes Including Casseroles I Winning Recipes | FIRST MACE WINNER ORIENTAL TEA-HONEY SPAREBIBS James Bradley Rt. 9 Fayetteville, Ark. 2 Ibs. spareribs 1 cup strong tea (2 bags brewed 5 minutes in 1 cup boiling water) '/« cup soy sauce V cup honey Place spareribs in shallow baking pah; cover and bake at 350 degrees for one hour. Pour off fat: cut into rib pieces. Increase oven temperature to 375 degrees. Combine tea with soy sauce and honey. Pour over spareribs and bake, uncovered, basting occasionally. 30-40 minutes or until crispy brown and tender. Remove to serving platter. Makes 4 servings. Stir in the soy sauce, wine, lugar, water, and partially cover the pan. 5. Reduce the heat to moderate and simmer for 2 - 2 ! .i hrs. «. Add carrots cubes in the last half hrs. Serves 4-6. Comfort shelled, deveined, cooked cup crumbled bread crumbs tablespoon snipped parsley teaspoon salt teaspoon pepper fillets of sole or flounder (IK Ibs.) t egg yolks 2 tablespoons fresh lemon juice dash cayenne About 1 hour before serving: (1) In large skillet melt 2 tablespoons butter, s t i r in garlic, onion, green pepper, a n d saute them till onion is golden. (2) Dice 8 shrimp, add them with bread crumbs, parsley, salt, pepper to skillet, then remove from heat. (3) On boned side of e a c h fillet, spread 2 tablespoons thrirnp mixture. Rofl up filleU tucking in any «rtr» mixture into ends of rolled fillets. Now refrigerate them on c o o k i e sheet while heating oven at 350 degrees. (4) Put 2 tablespoons butter in baking dish and place in oven. Wlien butter melts arrange fillets in it, flap-side down. Brush them with butter, bake 25 to 30 minutes. (5) While fillets are baking use blender to make hollandaise. Heat in saucepan '/« cup butter till bubbly. Put i n t o Mender ege yolks, lemon juice. Vt teaspoon salt, cayenne. Turn blender on low speed. White blender is on low speed, add butter. When butter is added hollandaise is ready. (6) When fillets are d o n e , arrange t h e m on platter and pour some hollandaise over them: then garnish each with · shrimp, then pour rest of hollandaise. Especially good when serve* with buttered broccoli, hot rolls. salad, a n d fruit turnover dessert.
