Ark. 4 (1 Ib. 4 01.) e*ns crushed pineapple 5 (1 Ib.) cms sliced peaches : (i lb. 4 ox.) e»w whit* seedless grapes 1ft cups maraschino cherriei 1 top. crystallized ginger (may be omitted) V, cup cold water 1 cup orange juice */4 cup lemon juice ZVt cups sugar 14 tsp. salt 2 cups chopped pecans 2 quarts heavy cream (whipped) J cups mayonnaise Drain fruit; save l'/4 cups pineapple juice. Cut peaches im cubes, grapes in halves, cherries in eights. Combine the fruit, chopped ginger and 1 large package of miniature marshmallinvs. Soften gelatin in cold water, heat pineapple juice to boiling, add gelatin and stir to dissolve. Add lemon and orange juice, sugar and salt. Stir When mixture starts to thicken, add fruit and nuts Fold in whipped cream and mayonnaise. Spoon into cartons, (paper, plastic or metal) cover and freeze. Makes about 9 quarts and keeps well for weeks. MANDARIN ORANGE JELLO SALAD Ruby Francis P. 6. Box 487 Salina, Okla. 2 pkgs. orange Jello 2 cups hot water 2 cups cold water 2 cans Mandarin oranges (reserve juice) 1 can crushed pineapple (reserve juice) marshmallows. miniature Place in an oblong cake dish. Refrigerate. Let set till firm. Add topping of: Juices and water to make I cup Bring to a boil in sauee^ pan Add mixture of 2 eggs. 3-4 tablespoons flour. 14 cup sugar to boiling juice, let thicken to « very very thick consistency. Set" off and let cool. Add to large box beaten Dream Whip. Mix thoroughly. Spread over Jello. PAPER CUP FROZEN SALAD C. E. Ark. 2 No. 2 cans kidney beans (drained) J pickles (sweet or dill) chopped small onion, minced tsp. salt . head lettuce (med. size head) hard cooked eggs cup diced celery ',', tsp. pepper l'i cap mayonnaise or sour cream Combine all ingredients ex cept 2 hard tailed eggs with the mayonnaise. One package lime Jello dissolved in 1 cup boiling water Add 1 tsp lemon juice and I small can crushed pineapple Cool until it begins to jell and add 1 cup whipped cream. U marshmallows. '/: cup cottage cheese. Blend together and chill. (Add 'J cup pecans if desired.) . Remove from freezer about 15 minutes before serving to loosen paper c u p s from pan. Peel off paper cups and place salad on greens.
