CruncKy Lime Cooler is tasty, attractive; may be served at dessert time as parfaits or as sundaes. By Mildred K. Flanary InUeperwJcnt, Press-Telcorarn Home Economics Editor HJ ARFAIT rates with manias the perfect ending for a meal, and Crunchy Lime Cooler is one such happy climax. It's made with vanilla ice cream, fresh lime sauce and bite sized shredded rice biscuits. Make it ahead of lime, if you like, the lime sauce will keep in the refrigerator at least a week. The cereal is flavored with sugar and lime peel and can be made several days ahead, stored in cake tins. The cereal is delicious this way; make d o u b l e amount and serve half as nibbles for bridge party or for the youngsters. Parfait g l a s s e s a r e n o t necessary, but those who have them can make the desserts a week or two ahead and freeze them. Thick milk glass sherbets a l s o can be used for freezing, but not thin g l a s s e s which m a y crack when exposed to the warm air again. Crunchy Lime Cooler 2 tablespoons melted butter or margarine 2 teaspoons and 1 teaspoon grated lime peel 2 cups bite-size shredded rice biscuits '/i cup and / 2 cup sugar Ys teaspoon salt 4 teaspoons cornstarch '/4 cup lime juice 3 /4 cup water 3 drops green food coloring 1 \'i teaspoons b u t t e r or margarine 3 cups ice cream* Combine melted butter and 2 teaspoons grated lime peel. Toss cereal in m i x t u r e to coat. Sprinkle l / 4 cup sugar over cereal. Cook over low heat 5 minutes to crisp. Cool on absorbent paper. Combine ! / 2 cup sugar, salt and cornstarch. Add l i m e juice, water and food coloring slowly. Stir over low heat. Boil ; minutes. Remove from heat. Add remaining butter and lime peel. Cool. Crush cereal to 1 cup. Place a scoop of ice cream in the bottom of each parfait glass. Add 1 tablespoon sauce and 2 teaspoons crushed cereal to each. Repeat. Add another scoop ice cream. Top each with 2 teaspoons cereal. Place in freezer for at least I hour. Yield: 8 parfails--1 cup sauce. * Amount of ice cream required depends on the size of p a r f a i t glasses used.
