GOURMET ON A BUDGET About Steak And Exercise This writing team, like most of our editors, is opposed to maneating sharks, and heartily endorses Motherhood, the Flag and the Boy Scouts of America. To a lesser extent, we support the League of Women Voters and the Parent-Teachers Associaton. And in theory we are in favor of good health. By "in theory" we mean that we are willing to write in favor of, but not necessarily practice, the virtues of a diet with plenty of green and yellow vegetables, low cholesterol foods (minimize the steaks, sausage and bacon), and moderate drinking. But when it comes to exercise, we two are split, even in theory. At the moment the female member of our team complains of a stiff neck "because she has been dong the Royal Canadian Air Force exercises of mornings, and the male member complains of a stiff neck for no 1 reason at all except that it is. it certainly delays its onset." It also said that current studies indicate exercise will lower the cholesterol level in the bood, thus helping to keep you from having a heart attack. In light of this fascinating information about our health, it will be easy to imagine the questionable delight with which we recently saw a Sunday newspaper, magazine which featured on its cover color photographs of Evangelist Billy Graham -- running -opera star Roberta Peters --- running. Both glowed with fabulous vitality., a depressing thing to see on a Sunday morning. The accompanying article spoke of the fad and virtues of running, an equally depressing thought at that moment. And it showed more pictures of people running -- ac- tess Mitzi Gaynor, president i a 1-possible Gov. George Romney of Michigan and Dr. Warren Guild of die Harvard Medical School. All were obviously just zip full of energy and health. Among other things the article told of a man who celebrated his 69th birthday by running 21 miles and walking 48 -- a total of 69 miles in 13 hours. This inspired us to shuffle off to the kitchen for seconds on coffee. The article mentioned studies by Dr. Jeremy Morris of London which showed that bus drivers who work sitting down had twice as many heart attacks as busy conductors who constantly walk up and down the stairs on the London double-decker buses. And it quoted Dr. Wilhelm Raab of the University of Vermont cardiovascular unit as saying, "If exercise does not prevent coronary disease, This information hit home because if your cholesterol level is low you don't have to be so fussy about cutting out all nice, fatty foods like well- marbled steaks. Possibly, just possibly, we'll take a jog occasionally just so we can enjoy steaks with clear consciences. "~~ In choosing a steak we always feel it's safer to tenderize before cooking, unless you are very confident of your butcher. Here are two sauces to make steaks even more enjoyable. SUPER STEAK SAUCE 2 tablespoons tarragon vinegar 2 tablespoons water 2 tablespoons finely chopped onion 1 teaspoon chopped parsley 2 egg yolks, beaten, V\ teaspoon salt V* teaspoon grated horseradish V's teaspoon paprika . 4 tablespoons butter or margarine Heat vinegar, water, onions and parsley to boiling point; simmer for 10 minutes, strain into top of double boiler over hot (not boib'ng) water. Gradually beat in the egg yolks. Add salt, horseradish and paprika, continuing to beat with fork or wire whisk. As sauce thickens, add butter, about 1 tablespoon at a time, stirring constantly. Makes about % cup. BLUE CHEESE SAUCE Vt cup margarine Vt pound blue cheese Vz teaspoon Worcestershire sauce Vz teaspoon lemon juice · 1 tablespoon chopped parsley Have margarine and cheese at room temperature and blend together. Blend in other ingredients, sample and adjust seasonings. Good also on hamburgers.
