Mix together the mayonnaise, horseradish, onion, food coloring, and a mixture of salt and white pepper. Add the dissolved gelatin gradually, stirring constantly until thoroughly mixed. Blend in the cucumber pulp. 4. Chill until mixture begins to gel (gets slightly thicker). If chilled in refrigerator, stir occasionally; if chilled over ice and water, stir frequently. 5. Lightly oil a 2-qt. mold with salad or cooking oil (not olive oil); set aside to drain on absorbent paper. 6. Beat whipping cream on high speed of an electric hand mixer until of medium consistency (piles softly). Fold into partially gelled mixture and turn into mold. Chill until firm. 7. Unmold onto a chilled serving plate and garnish with thin scored slices of un- pared cucumber. 8 to JO servings Grilled Lobster Sandwich 'The waffle-sandwich maker, with its interchangeable grids, is a versatile addition to a homemaker's electrical appliances. Top each with a slice of braunschweiger, thin dill pickle slices, a thin slice of Italian red onion, and another slice of bread. Spread outside surfaces with softened butter. Grill as in recipe for Grilled Lobster Sandwich. Chocolate Divinity TO PREPARE AND COOK: ABOUT 1 HR. 2 sq. (2 oz.) unsweetened chocolate 2 cups sugar - % cup water '/ 2 cup light corn sirnp % teaspoon salt , 3 egg whites 1 teaspoon vanilla extract 1. Melt chocolate and set aside to cool. 2. Combine next four ingredients in a heavy 2-qt. saucepan; set over medium heat and stir only until mixture begins to boil. Cover and cook 5 min. 3. Remove cover and set candy thermometer in place. Boil mixture without stirring until sirup reaches 252Â°F (hard ball stage--forms a ball which is pliable yet hard enough to hold its shape in very cold water). During cooking, wash any crystals from sides of pan with a pastry brush dipped in water. 4. Shortly before sirup reaches required temperature, beat egg whites in a large bowl using high speed of electric mixer until stiff peaks are formed. 5. When the sirup reaches 252Â° F, immediately pour sirup in a fine stream onto stiffly beaten egg whites, beating constantly using high speed of mixer. In the early stage, the mass flows down from beater in a continuous ribbon. Continue beating until mixture begins to lose its gloss and no longer flows but holds its shape (about 35 min.). At this point, immediately blend in vanilla extract and cooled chocolate. 6. Working quickly, drop by teaspoonfuls onto a lightly buttered baking sheet. Cool. until set. Store in a cool place in a tightly covered container. Don't overlook the fact that table ovens, within their size limits, can achieve results comparable to range ovens--baked potatoes and small roasts are good examples. With this handy piece of equipment, foods may also be kept warm at the table until you are ready to -serve.
