TO CHILL: 3-4 HRS. 4 to 5 medium-sized cucumbers i/ 2 cup cold water 2 tablespoons (2 env.) unflavored gelatin \Vi cups mayonnaise 2'/j tablespoons prepared horse-radish 2 tablespoons grated onion 10 to 15 drops green food coloring 1 teaspoon salt '/ t teaspoon .white pepper 1 cup chilled whipping cream 1. Rinse cucumbers, pare, cut lengthwise into halves, and remove and discard seeds. Cut cucumbers into pieces. Finely grind enough cucumbers in an electric blender to make 3 cups of cucumber pulp. Set aside. 2. Sprinkle gelatin evenly over cold water in a bowl; let stand about 5 min. to soften. Dissolve gelatin completely over c very hot water. 3. Mix together the mayonnaise, horseradish, onion, food coloring, and a mixture of salt and white pepper. Add the dissolved gelatin gradually, stirring constantly until thoroughly mixed. Blend in the cucumber pulp. 4. Chill until mixture begins to gel (gets slightly thicker). If chilled in refrigerator, stir occasionally; if chilled over ice and water, stir frequently. 5. Lightly oil a 2-qt. mold with salad or cooking oil (not olive oil); set aside to drain on absorbent paper. 6. Beat whipping cream on high speed of an electric hand mixer until of medium consistency (piles softly). Fold into partially gelled mixture and turn into mold. Chill until firm. 7. Unmold onto a chilled serving plate and garnish with thin scored slices of un- pared cucumber. 8 to JO servings Grilled Lobster Sandwich 'The waffle-sandwich maker, with its interchangeable grids, is a versatile addition to a homemaker's electrical appliances. TO PREPARE AND GRILL: ABOUT 15 MIN. 1 6-oz. can lobster meat, drained 3 tablespoons finely chopped green pepper 1 tablespoon finely chopped onion ! /2 teaspoon lemon juice l /4 teaspoon Worcestershire sauce 6 drops Tabasco 1 to 2 tablespoons thick sour cream 8 slices of bread 1. Start heating sandwich grill according to manufacturer's directions. 2. Separate lobster meat into small pieces and mix in the next six ingredients. Spread four slices of bread with equal portions of the mixture. Top with remaining slices of bread. 3. Spread outside surfaces of bread slices with softened butter. Grill until golden brown. Serve hot. 4 servings Note: If desired, arrange crisp bacon slices over the lobster mixture before completing sandwiches, or blend V4 C UP finely chopped Swiss cheese into the lobster mixture. Family Weekly, April 8,1962 Grilled Braunschweiger Sandwich Spread prepared mustard on bread slices. Top each with a slice of braunschweiger, thin dill pickle slices, a thin slice of Italian red onion, and another slice of bread. Spread outside surfaces with softened butter. Grill as in recipe for Grilled Lobster Sandwich. Chocolate Divinity TO PREPARE AND COOK: ABOUT 1 HR. 2 sq. (2 oz.) unsweetened chocolate 2 cups sugar - % cup water '/ 2 cup light corn sirnp % teaspoon salt , 3 egg whites 1 teaspoon vanilla extract 1. Melt chocolate and set aside to cool. 2. Combine next four ingredients in a heavy 2-qt. saucepan; set over medium heat and stir only until mixture begins to boil. Cover and cook 5 min. 3. Remove cover and set candy thermometer in place. Boil mixture without stirring until sirup reaches 252°F (hard ball stage--forms a ball which is pliable yet hard enough to hold its shape in very cold water). During cooking, wash any crystals from sides of pan with a pastry brush dipped in water. 4. Shortly before sirup reaches required temperature, beat egg whites in a large bowl using high speed of electric mixer until stiff peaks are formed. 5. When the sirup reaches 252° F, immediately pour sirup in a fine stream onto stiffly beaten egg whites, beating constantly using high speed of mixer. In the early stage, the mass flows down from beater in a continuous ribbon. Continue beating until mixture begins to lose its gloss and no longer flows but holds its shape (about 35 min.). At this point, immediately blend in vanilla extract and cooled chocolate. 6. Working quickly, drop by teaspoonfuls onto a lightly buttered baking sheet. Cool. until set. Store in a cool place in a tightly covered container. About 48 pieces divinity Baking a la Table Top The electric table-top oven is a wonderful aid in the heating and baking of a vast variety of packaged prepared foods --delicately browned refrigerated biscuits and rolls; brown and serve rolls, coffee cakes, and frozen pies, warmed to perfection; piping hot frozen dinners; creamed sea food and poultry; fluffy vegetable souffles; scalloped or au gratin potatoes; and many more. Don't overlook the fact that table ovens, within their size limits, can achieve results comparable to range ovens--baked potatoes and small roasts are good examples. With this handy piece of equipment, foods may also be kept warm at the table until you are ready to -serve.
