.H-6--Independent, Prett-Telegram long Beoch Wwr««!a», Harib II. l»« 7hurray, March II, 197* FOOD AND YOUR HEALTH Weight stems from calories the air? _ A. In this country we have freedom of speech and giving diet advice seems to fall in the catego- diet did for his or her ry of free speech. Anybody health, can give an opinion of About all you can do is what a particular food or send letters of complaint to the program, the station or network, and the advertisers -- or stop watching TV talk shows! By FREDRICK 3. STARE ; M.D. Chairman, ' Harvard University V Department of Nutrition ... Q -- What are the food value and starch content .pf-potaloes, bread, noodles and rice? My daughter ·says bread and potatoes .only put fat on people; I don't agree. A -- While your daughter is correct in that the four foods mentioned have considerable starch, varying from 20 per cent in potatoes to 24 per cent in rice, they also provide other nutrients, all are good foods and along with other foods provide good nutrition. For example, they all supply some pro- tein; boiled potatoes are a fair source of vitamin C; if the bread and noodles are made with enriched flour they're a good source of three of the B-vitamins -- thiamin, riboflavin and niacin. As to fattening properties, these foods are no more fattening than other foods. Too many calories, regardless of UK source, is what causes weight gain. Of coarse, if the potatoes are fried, the fat greatly adds to the calories. . Q -- Can cholesterol be lowered by following a particular diet and the use of medicine? A -- In most people the level of cholesterol in the blood can be reduced 15 to 20 per cent by regulating the diet -- less total calories so as to lose a little weight, less saturated fat (mainly meat and milk fat), less cholesterol in the diet (fewer egg yolks) and more polvunsatorated fats and oils. The same lowering of cholesterol can be obtained through the nse of various drags. Unfortunately, the effect of diet and of drags is not additive, that is, one cannot lower cholesterol 15 per cent by diet and then another 15 per cent by drugs. Q -- I would like inform a t i o n regarding "soft margarine" and "diet margarine." If ore is on a l o w - l a t , low-cholesterol diet and trying to maintain his weight, which of Ihc two would be best? A -- Soft margarines usually have less saturated and more poiytmsatu- rated fat than conventional margarines or batter. Diet margarines have only half the fat and therefore half the calories. Both are desirable properties in modifying the diet so as to lower blood cholesterol. Q. I am upset by the a m o u n t of weird and scientifically inaccurate diet advice given on TV talk shows by prominent people, especially movie stars and television per- s o n a l i t i e s .
