While nutritionists might describe it as an Indian's revenge, chip makers and sellers look back with fond affection at the chef who goofed -and founded a billion dollar industry -- in 1853 "The potato chip was invented by mistake," says Larry Burch of Cleveland, Ohio, executive vice president of Potato Chip Institute International. "An Indian -- an American Indian -- was a chef in Saratoga, N. Y., in 1853 when he had an order for French fries -- sliced thin. A letter from Reba Staggs, director of the National .Live; Stock Meat Board's Home ·Economics Department in Chicago, raises the metric issue. "We don't know about your resolutions," begins the letter, "but this year we are .planning to think metric more than ever before. "It will be EASY to develop and write recipes for a kilogram of ground beef or pork chops cut 3 to 4 centimeters thick, to roast beef in a 165 degrees C. oven until the thermometer registers rare (60 degrees C.)," Ms Staggs continues reassuringly. And, to make such recipes even easier,' to follow, she enclosed a metric converter, one of '.the most mind-blowing little gadgets we've seen in quite awhile. "Set the numeral 1 at either end of the C Scale over one of the numbers to be multiplied on the D Scale. Below the other number to be multiplied on the C Scale, find the /answer on the D Scale . ..." begins its conversion directions. And, "We will adjust, .right?" continues the letter. Your resolution is a progressive one, Ms. Staggs, but we haven't made one yet to go through'the. .mental gymnastics required to compute, on the converter .whether our weight has gone up to five or six kilograms since Christmas. In another realm, the question of dress :-*iems is confusing enough without worrying about whether they should be six centimeters above or below knees. Somehow, 91-60-91 centimeters don't sound 1 like very flattering measurements -and being referred to as "all wool and .!) meter wide" is even worse than "half a yard." · We're glad 1 you're "thinking .metric", in Chicago, but do you really mind if Tucson ; stays : in the-Dark Ages awhile?
