Falls -of rJ It's sure been a beautiful week and many of you have made it even more so for me with your encouragement and kind words I about this column. My two greatest fans are Ryan (the little boy next door) and my son Steven. They're both two and have been sampling last week's cookies. Ryan's mother assures me that their enthusiasm will wane when I get on to main dishes and I suspect she's right. In honor of Marengo's first Innaugural Ball this week we have theiavorite recipes of our new mayor, city clerk and treasurer.

Jim Cowan's favorite summertime food is strawberry short- i cake and his wife, Joan, was kind enough to share her recipe for the shortcake. Burke chose a floor length gown of peach knit with chiffon sleeves for her son's wedding, complimented by a corsage of yellow and white daisies. Burke. Special guests at the event were the bridegroom's grandmother, Mrs. Elma Flemming of Marengo and his aunt and cousin, Mrs.

Don Hoy and son, Paul of Manhattan, Kansas. The bride attended schools in Oklahoma and now works for Steams-Roger Engineering Co. in Denver, Colo. The bridegroom is a 1966 graduate of Marengo Community High 2 cups flour teaspoon salt 2 tablespoons sugar 1 tablespoon baking powder 5 tablespoons shortening (such as Crisco) 34 cup milk Sift dry ingredients together. Mix shortening with dry ingredients, pour in milk and mix thoroughly.

Bake in a greased 9" pan at 400 degrees for 15 to 20 minutes. Slit in half and fill. A dish that's been a favorite of Lucille Polnow and with her kids as they were growing up is her Swiss Steak. LUCILLE'S SWISS STEAK 1 round steak thick) flour 1 can mixed vegetables (do not drain) 1 8 oz. can tomato sauce 1 small can mushrooms (may be omitted) 1 medium onion (sliced) Pound all the flour into the steak so that it will absorb.

The meat can be left whole or cut into serving pieces. Brown on both sides in a roaster or other pan that can be put in the oven. Top with onion and bake about 1 hour in a 325 degree oven. Then add the un-drained mixed vegetables, tomato sauce and mushrooms. Bake another l'i to 2 hours.

The vegetables and tomato sauce will thicken to make gravy. Lucille notes that she always serves this with lots of mashed potatoes, salad and hot rolls. Our new treasurer, David Nelson, and his family enjoy potatoes done on the grill with a different twist. It sounds good and easy, too. NELSON GRILLED BAKED POTATOES medium-size baking potatoes (Washed) onions sliced in half salt pepper oregano butter or margarine Allowing at least one potato each, slice each spud lengthwise into three or four sections, depending on size.

Butter all sides of each section and sprinkle with salt, pepper and; oregano. Reassemble layering with onion slices. Double wrap with foil to keep the butter and juices in. Put right on the coals of an open grill for about an hour, turning every ten minutes or so. If you are using a Weber kettle they will probably be done in about 30 to 45 minutes.

My special thanks to Joan, Lucille and Beth for their cooperation in getting these recipes to me. This week I splurged on two items to help me in the kitchen. One is an egg slicer which I'll tell you about next week and the other is a nut mill. Besides being terrific for grinding nuts I've discovered the nut mill is great for making a few graham cracker crumbs without much fuss. Another hinMo go with last week's Sprits cookies-if you use the pinwheel plate and put a chocolate chip in the center of each cookie before baking they have that bakery look when they're finished.
