NEWS JOURNAL TUESDAY, MARCH 14, 1995 M. Fred Tidwell, 80, chef and preservationist SEAFORD "I like to eat, 1 like to cook and I like to have a good time," gourmet chef M. 1 Fred Tidwell said in 1993. The former Seaford restaurateur and Eastern Shore historic preservation leader died Saturday in Nanticoke Memorial Hospital. He was 80.

In 1972, Mr. Tidwell retired to the Eastern Shore after a career as a business instructor and college administrator in Oklahoma and New York City. He started a popular cooking school, wrote about food for local newspapers, judged food contests and opened Seaford's first gourmet restaurant. He also spearheaded museum improvements and restored an 18thcentury manor house. Two years ago, failing health led him to sell the restaurant, Bon Appetit, but he continued to hold cooking classes in his Seaford kitchen until last spring.

For the past 12 years, he wrote food columns for the Tidewater Times of Easton. Raised in Muldrow, Mr. Tidwell earned a master's degree in business administration from Oklahoma State University and a doctorate in education and business from Stanford University. He served in World War II as a Navy commander in the Pacific. He held teaching or administrative posts at Ponca City (Okla.) High School, San Jose (Calif.) State College and Grossmont (Calif.) High School and Junior College before joining City University of New York in 1965 as night school dean.

After retiring he moved to East New Market, where he restored the 1740 Friendship Hall. As Dorchester County (Md.) Historical Society president in the early 1980s, he helped build Nield Farm Museum in Cambridge, and restore the society's 18th-century headquarters, Meredith House. He helped start and headed East New Market Heritage Foundation, a historic preservation group. He attended the New York Restaurant School, the city's China EDGAR G. AILES, 76, of 2121 St.

were always filled, and most of his students were repeats." In 1991, he opened the 100-seat Bon Appetit in a Victorian storefront on High Street. Soon afterward, a News Journal review said that "Fred Tidwell has created an oasis of refinement and class that extends from the fine art on the walls to almost every morsel of food on the plates." Mr. Tidwell spent evenings going from table to table. "Someone said that with his shock of white hair, he looked like Col. Sanders," his son said.
