If care be taken to use positively stale light bread, as a foundation. None under two or three days old will answer. This top dressing Is greatly improved by mixing It with the Juice of an orange or lemon. The marmalade Is supposed to give sufficient sweetness, but a little sugar may be added, if wished.

Eat with hard or eoft sauce, as fancied. German Coflee Cake. Dissolve a compressed yeast cake In a cupful of luke-warm milk, add a pinch of salt and a tablespoonful of sugar. Put a cupful of sifted flour into a bowl, and put the milk yeast In the center, mix to a smooth batter and set In a warm place to rise. Beat half a cupful of butter and three-quarters of a cupful of sugar to a cream; 1 add four whole eggs and yolks of three eggs, tw cupfuls of flour alternately.

First add a whole egs, then a few tablespoonfuls of flour; then another egg, stirring -each egg in until it disappear In the batter before adding more flour. When all the eggs and flour are in, add a tablespoonful of finely-chopped citron; two of deeded, chopped raisins, and two or three tablespoonfuls of chopped almonds. Flour the fruit so It will not eink. Let it rise for three hours, or until it is very light and thin; bak In a moderate oven for an hour. Do not let it get too brown.

The broth from the beef stew can also be used, but we do not like anything for this quite so well as the veal broth.

Golden Butter. The much-talked-of terrapin served to Prince Henry at the New York dinner owed much, both as regards flavor and appearance, to the sauce which always served with it when cooked "Philadelphia style." This sauce is within the compass of any cook with a "knack," and is delicious with salmon or halibut. It is made as follows: Jlelt a tablespoonful of sweet butter and when boiling hot stir In an even tablespoonful of dry rice flour. Do not allow the butter to brown. Add gradually to the thickened butter half a pint of milk, when thick and smooth add this to the yellows only of two eggs, which should be in readiness, well beaten, In a bowl.

Do not cook after the eggs are added. Season to taste and always pick out fpr this sauce eggs of a deep yellow. Entire Wheat Pie Crust. Mix equal parts of white and entire wheat flour together with a little salt; then moisten with thin sweet cream. Have flour and cream very cold and mix as quicklv and lightly as possible.

Do not knead the paste, but mix up rutting and folding It with a knife until well mixed. Holl out lightly and bake quickly. The crust will be lighter and more tender if the paste is allowed to set on Ice for some time before baking. Fruit and Nut Drop Cakes. Separate four eggs' and beat the yolks to a thick cream.

Add the juice of half a small lemon and beat again. Then add one cup of pounded nut meats and one cup of date meats rubbed smooth with a little think cream. Beat all together; then add the whites of the eggs beaten to a froth. Fold and chop in two tablespoonfuls of browned entire wheat flour. Drop onto buttered baking tins by tablespoonfuls and bake from ten to fifteen Choosing lobsters.

The heaviest are the best, and It they are alive they should be very active with their claws. A good small-sized lobster will ofitn weigh heavier than a larger one, so do not let size govern your choice. For boiling select the male, the flesh Is firmer and the shell a brighter red. The hen lobster should be chosen for sauces and salads on account of their coral. It Is casy to distinguish between the two; the lien has a broader tall and the two uppermost flr.s within the tail ar? more pliable than those of the male lobster.
