Calories Are Key To Health Foods Vary In Content By JOSEPHINE LOWMAN All well-informed moderns are dictionary wise, and believe me, the word calorie is one of the most important ones in the book as far as health and beauty are concerned! If you will look calorie up in your word guide you will find something like this: "A calorie is a unit of heat. The quantity of heat necessary to raise the temperature of a kilogram of water one degree centigrade. Unit of energy supplied by food. One ounce of sugar will produce about a hundred such calories.

Quantity of rood capable of producing such an amount of energy." That sounds a little involved but we do know-one thing! Too many calories certainly put the heat on us and ruin our dreams of slim loveliness and greatest attractiveness and vitality. Only during the past few years have women been aware of the importance of calorie counting and even now few of them have a comprehensive knowledge of which foods supply the greatest number of these small heat units. Actually a calorie is a heat unit rather than a food unit but it has been found that the food we eat supplies the body with energy and heat in varying amounts for use in carrying on life's activities. Therefore, we have food units equivalent to heat units. When w-e consume more food than we require for activity and heat the remainder is sadly stored as fat.

Foods vary greatly in their calorie content. For instance, one ounce of fat gives you about 265 calories, which is more than twice the number in other foods, namely proteins and carbohydrates. This is why fats are cut low in the reducing diet. Many women overlook this fact and use too many fats while conscientiously leaving off much maligned baked potato or the luxury of sugar in coffee, which they could afford if they were calorie wise. It would be a great mistake to plan any diet, and especially your reducing diet, by the calorie standard only.

Happily, many of these essential foods which are high in minerals and vitamins are also low in calories. Fresh fruits and green vegetables and salads are very low in calorie count and yet high in protective value. The same thinj is true of skimmed milk, ean meat, whole grain products and eggs, if the trimmings are left off and they are prepared properly. In almost every instance it is the fat which is added in cooking or afterwards, which makes them anathema to the reducer. We might well think of ourselves as engines in skirts.

We must keep the machine in good condition with protective foods. We must supply it with sufficient fuel for heat and activity but there is no need to add a rumble seat or balloon tires to the picture! Chopped chives and parsley. Devilled Eggs, Hot or Cold. Wash vegetables and cook asparagus, potatoes, zucchini and carrots in separate pans until tender, usng as little water as possible. Season with salt when half done. Arrange asparagus on hot platter to divide it in 4 Arrange devilled eggs in center.

Fill one section with potatoes, each one cut in 3 or 4 slices, one with zucchini dressed with melted butter or margarine and chives. Have tomatoes cut in quarters, seasoned and baked in hot oven of 400 degrees F. for 12 to 15 minutes. Dip carrots in mixture of 2 tablespoons each of butter or margarine, honey and lemon juice. Sprinkle with chopped parsley.

Serve very hot. Serves 6. Stuffed Baked Potatoes with Cheese 6 medium-sized Idaho potatoes. 'i cup hot milk. 2 tablespoons melted fat.

tablespoon buttered crumbs. 1 tablespoon grated cheese. Salt and pepper. eggs. Select medium-sized or large potatoes; scrub and bake at 450 F.

When done, remove a piece of skin from the side of each potato to make it boat-shaped, or cut large potatoes in two length-wise. Scoop out the inside, being careful not to break the shell.
