A native of Oakland, Vario became involved in the restaurant business in Reno in the early '50s. He was a partner in the Town House on First Street (where Penney 's is now located) and opened The Stein (formerly the 116 Club) on Center Street in 1956. He started the 19th Hole at Lakeridge Golf Course in 1972 and later opened, the bar in the Continental Lodge. He met his wife, the former Jackie Miller, in 1951 while she was performing with the George Moro Dancers at the Riverside. In 1977, Vario and another developer announced plans for a 300-room hotelcasinorestaurant complex on his South Virginia Street property.

The project, which was later scrapped, was to be called Vario's Villa Capri.
