Wheat Belt Meat Loaf l k cup wheat germ Vi cup tomato juice 2 lbs. ground beef chuck "1 teaspoon grated onion V\ cup chopped green pepper Vk teaspoon salt Vi teaspoon pepper (Makes 8 servings) 4 tablespoons butter or margarine 4 cups dried bread cubes Vi cup wheat germ X A cup celery chopped fine V\ cup grated onion Vi cup moat stock or tomato juice ] egg, slightly beaten Combine Vi clip wheat germ with V4 cup tomato juice. Add beef, onion, green pepper, seasonings; mix well. Molt butter or margarine in a skillet over low heat. Add bread cubes and saute until lightly browned; remove from heat. Add wheat germ, celery, onion, liquid and egg. Mix well. Divide meat mixtutt in two equal portions. Place one portion in bottom of 9x5x3" loaf pan. Spread wheat germ stuffing over meat; then place remaining meat over stuffing. Shape into rounded loaf. Bake in moderate oven (350 degrees) 1 tiour or until done. Slice to serve. Method: Pour melted butter over bread crumbs; toast under broiler or in hot (425F) oven until golden-brown. Add rolled oats, chopped pickle, onion, 1 teaspoon salt, pepper. Mix thoroughly. Sprinkle water on top, stirring lightly. Cut steak into 6 pieces; sprinkle with IV* teaspoons salt. Place a tablespoon of stuffing at one end of each piece. Roll up; fasten securely with toothpicks or string. Roll in flour. Brown on all sides in hot fat. Add tomato juice; cover and simmer 1 hour or until lender. Add more tomato juice if necessary.
