MEAT AND POTATO CAKE (Serves 6 -8) One and one-half cups soft bread cubes, % cup liquefied nonfat dry milk, Vi cup finely chopped onion, 1 *A teaspoons salt, Vz teaspoon pepper, 2 pounds lean ground beef, 4 medium potatoes, cooked, Vt cup liquefied nonfat dry milk. Combine bread cubes, % cup liquefied nonfat dry milk, onions, salt, pepper and ground beef. Mix thoroughly. Divide mixture in half and place in two (8-inch) pie or cake pans. Bake in moderate oven (350 degrees F.) about 30 minutes until browned. Turn meat layers out on board or baking sheet. Combine V* cup liquefied nonfat dry milk and cooked potatoes. Beat until fluffy. Season to taste Spread half of the potatoes over one layer of meat; cover with second meat layer. Spread remaining potatoes over top.
