Page 4 The Salina Journal Sunflower Sunday, November 22,1981 &* ^ Sunflower Recipe Exchange Main Dishes Oven-Fried Chicken 1 c. instant potato flakes or % c. cornflake crumbs V4 t. salt V41. pepper V4 t. rosemary 1 egg, slightly beaten 11. lemon juice 2 Ib. frying chicken, cut up Heat oven to 400 degrees. In a plastic bag, combine potato flakes and seasonings. In shallow bowl, combine egg and lemon juice. Dip chicken pieces in egg mixture, and then shake in plastic bag. Place chicken skin side up in ungreased baking dish. Bake uncovered at 400° for 1 to 1V4 hours or until chicken is tender. Tip: Paprika, tarragon, basil, thyme, or marjoram may be added to potato mixture. Marilyn Beard 318 Missouri Salads Curried Fruit Bake 1 regular size can peaches 1 can (No. 2) pineapple slices 1 can pear halves 5 maraschino cherries % c. butter % c. brown sugar 4 T. curry powder Raisins (optional) Drain fruit, arrange in 1% qt. casserole. Melt butter, add sugar and curry powder, spoon over the fruit. Bake 1 hour at 325°. Marilyn Smith 1535 N. 9th Delicious Apple Salad 1 pkg. raspberry gelatin % pkg. lemon gelatin 1 c. boiling water 4 delicious apples, ground 1 Ig. can crushed pineapple, un- drained 1 orange, grated rind and juice 1 c. sugar Dissolve gelatins in hot water, cool. Add other ingredients and pour in 9 x 13 inch pan or 12 individual molds. This tastes much like a cranberry salad. Esther Kohlieber Herington Christmas Salad 1 1 small pkg. Philadelphia cream cheese 1 c. mayonnaise 1 c. cream, whipped 1 small jar red maraschino cherries, drained 1 small jar green maraschino cherries, drained 1 c. small marshmallows Soften cheese and mayonnaise together with fork, add whipped cream and fold in remaining ingredients. Place in pan and keep in freezer. Set out a few minutes and cut into squares and serve. Use square pan. Mrs. Max McClintock 435 Claremont Dr. Christmas Salad 2 1 can cherry pie filling 1 small can crushed pineapple, drained 1 small can sweetened condensed milk 1% c. miniature marshmallows 1 small pkg. pecan pieces 1 med. container whipped topping Mix ingredients in order given. Chill well. This can be put in muffin cups and frozen. Tryphena Corse 1020 Gypsum 'Our Favorite' Jell-O Salad 1 box (6 oz.) lime Jell-O 1 box (6 oz.) lemon Jell-O 3-4 bananas, sliced 1 can (No. 2) crushed pineapple, drained (save juice) Ms c. chopped pecans Vfe c. sugar 2 T. flour Pineapple juice legg 2 T. butter 1 large carton Cool Whip Mix lemon Jell-O and lime Jell-O according to directions on the box. Chill. Add sliced bananas, drained crushed pineapple and pecans. Refrigerate. Mix sugar and flour together. Add pineapple juice and egg, cook until thick. Add butter and chill. Add Cool Whip. Spread on Jell-O. Garnish with grated cheese and more chopped pecans. Vegetables Eggplant Casserole 1 lg. eggplant, peeled and cut up V4 c. oleo V4C.milk % c. bread crumbs Salt and pepper V* c. chopped onion 2 beaten eggs te c. grated cheese Cook eggplant until done and drain. Add oleo, milk, bread crumbs, salt, pepper and chopped onion. Add beaten eggs and cheese. Stir all together and pour in greased casserole. Bake in 350° oven for 30-40 minutes. Mrs. Lillian Pihl Cuba Cookies Swedish Butter Cookies 1 c. brown sugar 1 c. margarine 21. baking powder 2 c. flour legg 11. vanilla 1 c. oatmeal Cream sugar and margarine. Add remaining ingredients. Roll into small balls. Place on greased cookie sheet. Press dough down with fork. Bake at 350° for 10-12 minutes. Rhonda Nichols 2444 Highland Candy Peanut Butter Candy 2 T. peanut butter 2 T. raisins 2 T. milk 1 graham cracker, crushed into crumbs te t. liquid sweetener 11. vanilla Cream together peanut butter, milk, sweetener and vanilla. Add raisins and mix well. Add graham cracker crumbs and mix. Form into balls or press into bar shaped piece. Yield is one serving. Each serving equals 1 meat, 1 fruit and % bread exchanges. Soften yeast in % c. warm water. Add beaten eggs, salt, butter, sugar, nutmeg and yeast to cooled milk. Stir in flour and raisins. Let raise until double. Squeeze off small balls of dough, let raise a little before deep fat frying. While warm, shake in bag with granulated sugar.
