Yet, oven moist, nelt-in-your-mouth over moist, melt-in-your-mouth creations with the wonderful flavor and fresh-baked aroma of yeast bakings. The basic recipe lends itself to infinite variety, too, in both coffee breads and buns — Jam Puffs, Cinnamin Streusel, Tutti-Frutti, Browned Butter Almond — take your pick of these and other mouth-watering toppings. They're all easy and fun to make. Most yeast recipes call for milk, which must be heated to lukewarm. But this recipe uses water, saving a step, an ingredient and a pan. *You mix and beat in the same bowl. Thorough beating replaces kneading.- You do this thorough beating with only half the flour added, which is much easier than beating a thick batter. And it gives a better chance to develop the gluten in the flour, so necessary for light yeast bakings. Then you beat in the remaining flour gradually until smooth. And there's no floured board to clean There's no shaping. You drop the dough by spoonfuls (we call it spoon-shaping) right into the baking pan. The resulting small rolls pull apart for serving—don't use a knife. The slightly irregular shapes add the homemade touch. The recipe utilizes the active dry granular yeast now nationally available. It doesn't need refrigeration, so you can always have it on hand in the cupboard. Serve these tender, rich-tasting breads when they first come hot and fragrant from the oven. Or warm them later, if desired, by slipping uncovered into a warm oven for a few minutes. Double • Quick Coffee Breads seem made-to-order for "that fourth meal, when you cat what you like." Try serving one variation or an assortement with piping hot coffee. Here's all you do—yeast and your oven do the rest: Grease 8" square oven-glass pan, or 9" square aluminum pan, or 10" iron skillet or 9" ring mold Choose topping and have it ready. % cup warm water (not hot— 110 to 115 degrees) 1 pkg. active dry yeast (not compressed) Vi cup sugar 1 tsp. salt 2V4 cups sifted flour 1 egg Y4 cup soft shortening or butter In mixing bowl dissolve yeast in water. Add sugar and salt, and about half the flour. Beat thoroughly 2 minutes. Add gradually remaining flour until smooth. Drop small spoonfuls over entire bottom of pan. Cover. Let fists in warm place (85 degrees)* until double in bulk, 50 to 60 min. Heat oven to 375 degrees. Bake until brown, 30 to 35 min Immediately turn out to avoid sticking. Serve warm *If kitchen is cold, set pan in cupboard with a pan of boiling wa ter for warmth and moisture. And here are the toppings: JAM PUFFS Fill half full 16 to 20 medium sized greased muffin cups. Let rise. Bake 15 to 20 min. When baked, spread with Vz cup thick red jam. Garnish with coconut or chopped nuts. CINNAMON STREUSEL Mix thoroughly 2 tbsp. butter, 1/3 cup white or brown sugar, 2 tbsp. flour, 2 tsp. cinnamon, Vi cup chopped nuts. Spoon dough into pan. Sprinkle with Streusel mixture. TUTTI-FRUTTI Mix into finished dough Vz cup candied fruit and V* cup chopped nuts. Spoon into pan. When baked, ice with a mixture of % cup sifted confectioners' sugar and 1 to 2 tbsp. cream. Decorate top with candied fruit and nuts. BROWNED BUTTER ALMOND Melt in pan 1/3 cup butter. Add Vz cup slivered blanched almonds. Heat until butter foams up in pan and browns and almonds are light golden brown. (Almonds brown a little more while cooling.) Cool to warm. Mix in 2 tbsp. white corn syrup, Vz cup sugar, Vz tsp. almond extract. Spoon in dough BUTTERSCOTCH NUT Melt in pan 1/3 cup butter and Vz cup brown sugar with 1 tbsp corn syrup. Add Vz cup pecans (or walnuts). Cool to warm be fore spooning in dough. SPFCY SUGAR PUFFS Fill half full 16 to 20 medium- sized greased, muffin cups. Let rise. Bake 15 to 20 min. Immediately after baking, roll in Vz cup melted butter, then in a mixture of 3 A cup sugar and 2 tsp. cinnamon. Serve hot.
