He walked to the office the other day with a recipe book hi* company has put out filled with holiday treats. It Is just the thing for those of us who haven't completed our holiday baking or for those who have and underestimated the amount they needed. We'll print some of the recipes with a special thanks to Tom. FESTIVE FRUITCAKE Line the bottom and sides of a S cup loaf or tube pan. Put the following into bowl and let stand until needed: V. c evaporated milk 3 tbsp. orange juice 16 marshmallows, cut fine Put the following into a large bowl: 4 doz. graham crackers (rolled into fine crumbs) |A tsp. cinnamon 'A tsp. nutmeg 1/8 tsp. cloves ^ v ^..^^ „„., Add milk mixture. Mix with spoon, then with hands till Crumbs are moistened. Press into pan. Top with fruit and nuts. Cover tightly and chill 2 days. Keep in cool -place. PRUNE CAKE Cream together: 1 cup sugar Add: 3 eggs (well beaten) 3 tbsp. sour cream Vz c'dates, cut fine 1 c raisins ('/« dark and Vz light) % c walnuts c candied fruit Vz cup shortening Vz tsp. each of cinnamon & nutmeg 2 cups of boiled, cut prunes in small amount of juice 1 tsp. soda a 1 Vz cups flour I Bake in loaf pan or 2 layers at 350 degrees. Top with this dressing or put between layers or _ layered cake: = Vz cup sugar Vz cup sour cream 1 egg Vz cup raisins Boil until it thickens. CHRISTMAS JEWELS 1 4-07.. bottle maraschino cherries (drained) & chopped 1 egg white 3 to 4 tbsp. milk 1 tbsp. vanilla 2 16-oz. pkgs. of confectioners sugar sifted (8% cup) 1 3Vz-oz. (IVi cup) flaked coconut 1 cup chopped walnuts Combine sugar, coconut, walnuts, cherries, egg white, milk and vanilla. Mix good with hands until mixture holds together. Add more milk, if necessary. Press into 9x9x2 pan. Frost with chocolate icing. In small saucepan, melt 1 square chocolate with 2 tbsp. milk and 1 tbsp. butter or oleo over low heat stirring constantly. Beat in % cup powdered sugar. Chill, and cut into diamond shaped bars, or small bars. Makes 2 Ibs. candy. PUMPKIN DESSERT RING cl 'P flour 'A cup chopped nuts cup raisins 'A cup shortening 'A cup water 1 cup pumpkin IV.-i cup sugar Vi tsp. baking powder 1 tsp. soda % tsp. cinnamon '/•i tsp. nutmeg Sift dry ingredients into bowl. Add shortening, water, nuts, raisins and pumpkin. Beat well 2 minutes. Add egg and beat 2 more minutes. Pour into well greased and floured bundt pan, mold or loaf pan. Bake at 350 degrees ^ lor 40-45 minutes. Serve with warm butter sauce. g • . Butter Sauce g ; Mix together: 3 1 cup sugar Vz cup cream !s Vz cup butter 1 tsp. vanilla H Bring to boil and cook until only slightly thickened. | LUSCIOUS LIME PIE S 1 envelope unflavored 4 egg whites S gelatin 3 '/a cup cold water S 4 beaten egg yolks = 1 6-oz. can frozen limeade = concentrate 5 In top of double boiler, soften gelatin in cold water; = add yolks and dash of salt, Cook and stir over hot, not g boiling water until mixture is slightly thick. Remove from 3 heat. Stir in concentrate. Chill, stirring occasionally, till = mixture mounds slightly when spooned. Beat egg whites = until soft peaks form. Gradually add sugar, beating to 5 stiff peaks. Fold in gelatin mixture, then whipped cream. = Add a few drops of green food coloring. Pile into cooled § pastry shell. Chill until firm. Top with whipped cream § "and candy lime slices. I EGGNOG PIE £ ! envelope gelatin i/, tsp. salt | 3 tbsp. cold water 2 tbsp. vanilla g 2 cups eggnog % tbsp _ rum = 1 cup dream whip ./z tbsp. almond Vz cup sugar Vz cup whipped whipping cream 1 9-in. baked pastry shell 5 >,: cup sugar Soften gelatin in water. Warm eggnog over low heat. Stir soft gelatin into eggnog - heat until gelatin is dissolved. Chill until partially set. Beat until smooth. Beat sugar, salt, flavoring and whipped cream. Pour intobaked pie shell. Sprinkle toasted almonds on top. Let set 3-4 hours before serving. CANDY CANE OATMEAL COOKIES 1 ( ' L 'P bu!u ' r 2V, cups sifted flour tsp. salt .- cup quaker oats 2 tsp. vanilla '-• cup confectioners sugar 2 ibsp. water Beat butter and vanilla until creamy. Add gradually; beat until fluffy. Add water. Sift flour and salt together; add to creamed mixture, mixing thoroughly. Stir in oats until blended. Shape into canes. Bake on ungreased cookie sheet at 325 degrees for 20-25 minutes. Coo). Frost canes with thin confectioners sugar frosting. Stripe with thick red frosting flavored with peppermint. CHRISTMAS COOKIES Cream Vz cup butter and 2 tbsp. powdered sugar together. Add 1 cup flour and mix well. Pat dough into a greased 8 inch square pan. Hake in moderate oven for ten minutes. Remove from oven and spread with the following mixture: 2 eggs (beaten) 1 cup sugar '/i cup flour Vz tsp. baking powder Mix and pour over baked cookies. Return to oven (350 degrees) for 20 minutes or until set. Cut into strips and roll in powdered sugar. HOT CHICKEN SALAD CASSEROLE -• cup coconut (shredded) -' cup chopped maraschino cherries cup chopped pecans 1 tsp. onion 2 tbsp. lemon juice Vz tsp. salt 2 cups potato chips Va cup Swiss cheese Vz cup mayonnaise Vz cup minute rice 3 cups chopped cooked chicken 2 cups chopped celery Vz cup slivered almonds Va cup green pepper 2 tbsp. pimento 2Vz oz. mushrooms 1 can cream of mushroom soup Blend chicken, celery, almonds, pepper, on ion and salt. Add lemon juice. Save some almonds for top. Alternate layers of chips and chicken. Top with chips, cheese and almonds. Bake for 20-25 minutes at 350 degrees. Included are the chorus, band, girls glee, and a brass choir, There will also be vocal solos or small groups.
