White's long-term study of aging Japanese-Americans has also led to other puzzling findings.

For one thing, men who ate the largest amount of soy tofu had the most severe cases of Alzheimer's. Researchers now believe that the plant estrogens in tofu block the body's naturally occurring estrogens from protecting the brain. Second, the shorter the men, the worse they did on tests of cognitive function. Other studies have found that a small head circumference was also associated with Alzheimers. There have been several studies linking a low level of education to a higher risk of Alzheimer's.

White and his colleagues are also studying whether men in the study who show strong use of two languages are better protected than men with only marginal use of the languages. 1996, Newsday HONOLULU Japanese men who migrated to Hawaii have higher rates of Alzheimer's disease than men living in Japan, a finding that suggests that lifestyle and environment may play a major role in the disease.
