The filling Is made as follows: Combine a pound of dry cottage cheese, two egg yolks, two tablespoons of sugar, a dash of salt, a dash of cinnamon and, if you like it, a few drops of vanilla. Mix it with a fork to a smooth consistency for spreading, yet thick enough to hold its shape when placed on the pancakes. Jf it's too thick, add a little beaten egg white, or sour cream.

If it's too thin, add dry cracker crumbs. ANOTHER DISH traditionally associated with Shevuoth Is cheese balls. Put a pound of dry pot cheese -through a soup strainer ink) a mixing bowl. Then beat together three eggs, a teaspoon of salt and three tablespoons of sugar until creamy. Then stir in a fourth of a teaspoon of cinnamon, a half cup of uncooked farina or matzo cake meal, three tablespoons of dry bread crumbs and a fourth of a cup of sifted flour.

Mix it until its smooth, and then mix it well with the cheese. Form it into 10 balls. Have ready five soaked and pitted prunes, cut in half. Press half a prune into each ball and tuck in the gap. Drop them into rapidly boiling salted water and cook for 20 minutes.

Lift them out with a perforated spoon as they rise to the top, and keep them warm until ready to serve. Then serve them up with a topping of sour cream. WE DIDN'T get many letters answered. But we'll get in Just one more. To Mr.

For plain cheese knisbes, like this: Dissolve a cake of granulated yeast in a fourth of a cup of water and two tablespoons of sugar. The sugar stimulates the yeast. Beat two eggs slightly, and mix them with a fourth of a cup of oil or melted butter. Sift together three and a half cups of flour and two teapoons of sugar, into a mixing bowl Make a little crater in the center of the flour and stir in the yeast to absorb a little of the flour.

Then combine a half cup of milk with a half cup of water. Now stir in the egg and shortening mixture, alternatinng with the liquid. Stir until most of the dry ingredients have been absorbed and the ball of dough can be handled with your fingers. Turn out on a board and knead it until it's smooth and elastic; about five minutes. Put it back in the mixing bowl, cover it with a towel and let it rise at room temperature until it doubles in size.

Don't hurry it. This should take close to two hours. You can make your cheese filling while the dough is rising. Here's how: Combine, in the order listed, a pound and a half of dry pot cheese run through a sieve, half a teaspoon of salt, four to six tablespoons of sugar depending on your taste, a fourth of a cup of dry bread crumbs (or crushed Wheaties), a tablespoon of grated lemon rind and two tablespoons of lemon juice. Mix it all up and let it chill.

Now back to the pastry: Pinch off balls of dough the size of an apple (a medium-sized apple), and flatten them to a quarter-inch thickness. But everybody should know about the delicious cheese filled "pancakes" called blintzes, and here's your golden opportunity: First, make a batter of two beaten eggs and half a cup of sifted flour, and then gradually add three fourths of a cup of milk, beating it all the time to keep it smooth. Then mix in a tablespoon of melted butter and a pinch of salt.

Use a 10-inch frying pan. Grease it and heat it. Then pour in a thin stream of starting in the center and tilting the pan to distribute it evenly and thinly over the bottom of the pan. Start with a low heat and increase it as soon as the pancake is smooth and AND the center of each place a tablespoon of filling and bring up the edges to cover in a half moon shape. If you have a fluted cutter, scallop the edges real pretty.

Put them on a buttered cookie sheet, leaving an inch and a half of space all around each one. Let them rise for another hour at room temperature. Now brush the tops with melted butter and bake them until they're lightly browned which will take 25 to 30 minutes in a 350-degree oven. For a fancy variation, add a fourth of a cup of chopped raisins or dates and use orange rind and juice instead of lemon.
