Fortunately that is not what happened. Chef Paul Poitras, class of 1972, Culinary Institute of America sees to daily fresh breads, a top selection of aged Midwestern beef and a lot of special attention to food preparations. Manager here is Stefan Erkl who was transferred from the Ft.

Lauderdale location of the 391st Bomb Group. In Florida there are thirteen 391st Bomb Groups, or 70 coast-to-coast in this company which began about 20 years ago in Long Beach, California. The meat for all of the restaurant locations is shipped twice-weekly from the Chicago stockyards by the same company there to insure that quality is kept consistent. Poitras controls the amount of bread baked for each day's use based on 60 loaves for every 100 guests expected. Without giving away too much of its secret mixture the bread includes whole wheat and cracked wheat, with apple sauce, honey and molasses and "some other things." The carnation that comes atop the bread served to your table is the restaurant's way of showing how fresh the bread really is.

Lunch is served from 1 1 a.m. until 3 p.m. Monday through Saturday with such notable items as a fresh spinach salad with hot bacon dressing, or the house salad with honey mustard dressing. All entrees include choice of soup or salad, the "farmhouse" bread and country potatoes. Two of the luncheon favorites are the bird of paradise salad made with seasonal fruit on pineapple half with sherbet or cottage cheese and finger sandwiches, $4.50, and the seafood platter France, $5.95.

The salad is arranged to resemble a bird, according to chef, while the platter is shrimp, scallops, and fish rolled in sliced almonds and corn crisps before frying. Soup, salad and bread is $3.95. There are four other salads, seven entrees ond a show of sandwiches and 1 burgers. The colonel's special Reuben is $4.50, the Aviator's steak sandwich is with onion straws and potatoes, $6.25. There is also a roast beef sandwich (the beefeater), a hamburger, bacon and cheddar burger, and a boneless breast of chicken broiled with smoked ham and cheese melt on a bun for $4.75.

The appetizers at lunch and dinner are the same (same price, too) with the interesting inclusion of mushrooms in a skillet, $1.95, onion straws, $1.75, stuffed potato skins, and crabmeat stuffed mushrooms, among others. RIVIERA BEACH, FLORIDA Happy hour participants will rejoice in the make-your-own taco bar Monday through Friday in the Cabaret lounge, and in the double-shotted drinks, plus a daily drink special. Again the seafood platter France is a favorite, for $9.95 at dinner. Number one favorite is the old English prime rib for $12.95, and third place goes to the scampi for $10.95. The prime rib has the distinction of being roasted under a cover of rock salt, which makes the outer edges something of a gourmet's treat. The scampi also gets special attention from its own butter that is made with olive oil, a much more expensive process than regular butter.

Chef informed me that "special butters" are also prepared for steaks, escargot and noodles as well. The "commander's dinners" are a New York steak with lobster tail for $16.95, and twin lobster tails for $17.95. Elsewhere, selections are from the broiler, the sea or "officer's club fare." Broiler items range from $6.75 for the chopped sirloin to $25.50 for the double-cut filet mignon for two with sauce Bernaise. Two broiled lamb chops are $13.95, tenderloin prepared with vegetables on a skewer is $9.50, top sirloin is $10.95, and "Rouen chicken," the old English chicken sandwich from lunch, without the bun, but with a demi glace sauce is $8.50. A child's menu is also available.

From officer's country there is steak Armstrong, a pan fried strip with bell peppers, onions and mushrooms, $10.95. Calf's liver is $8.45, veal Normandy is $12.95 and there is the "marauder deep dish cheese pie," English cousin to the quiche made with eggs, wine, ham, onions and "cheese and cheese and cheese," $6.50. A catch of-the-day is part of the seafood menu, with crepes with baby shrimp and crab, red snapper sauteed in lemon butter ($1 1 seafood imperial, which is crab, scallops, and shrimp baked in white wine and cheese sauce, and "shrimp matching, Essex." This latter is sauteed shrimp with shallots, a blend of white wine, cream and Hollan-daise sauce, $10.95. Most of the staff here is "very young" but their cheerful attitude is the reflection of a happy company.
