Mix this into sauce. Slice the skinned oranges over duck, and pour sauce over. Serve. BROWN STOCK Put giblets in skillet with 1 sliced onion, 1 sliced carrot, and brown in IVz tbsps. cooking oil. Pour out fat. Add Vfi cups beef bouillon or chicken broth to giblets, plus Vi bay leaf and a pinch of thyme. Simmer an hour or more. Skim grease. Finally, to be truly festive, why not serve a HUNTER'S PUNCH to serve 12 to 14) 8 bottles or cans of good beer 1 lb. sugar 1 stick (or "j tsp.) cinnamon rind of 1 lemon 1 piece of ginger (or '4 tsp ground) 12 egg yolks 1 12 cups rum (darker the better) 1 cup Madeira (or sweet sherry 'i lb. sweet butter Add to the beer everything down to the egg yolks, and heat just to boiling (do not boil). Beat eggs well and slowly add rum and wine, beating the while. Now add the butter, bit by bit. When all is added, pour hot beer mix (strained) into egg mix, beating like mad to prevent curdling. Serve in punch cups. warm. Happy Holiday! thing. The recipe here calls for a large chicken. Try it with a small turkey of 8 to 10 lbs. Then simply double everything this recipe calls for. POL'LET VALLEE D'AUGE 1 large chicken (4 lbs.) or 4 chicken breasts flour S tbsps. butter 1 large apple, sliced 3 tbsps. Calvados, Apple Brandy or Apple Jack j cup heavy cream 3 egg yolks salt & pepper METHOD Dust chicken parts with flour. Cook in 4 tbsps. melted butter for 10 minutes. Add apple slices and cook 15 minutes, covered. Pour warmed spirits over chicken, and ignite. (Calvados is sometimes available; applejack always is.) The sauce: Cream, yolks. 1 tbsp. butter, dash Calvados cook 5 to 6 minutes over low heat. Pour over chicken. For my money, though, I'd rather build my Thanksgiving Dinner around another bird entirely ... a duck or two. If wild, so much the better, i Just cook a little less as most people prefer the wild ones pink, even bloody. Although I, for one, don't. ) This is the classic recipe for duck with orange sauce. DUCK BIGARADE (5 or 6 servings) 3 oranges, skinned (reserve skins) 1 large duck (about 5-6 lbs.) -ft 1 "heat." Today you can buy fresh or dried chili peppers nearly everywhere, or you can use the chili powders, in Mexico, peppers vary greatly in size, color and taste. If you can't get all the chilis or powders called for, use what you can get ( 1 tbsp. powder equals 1 dried chili pepperi. 1 small turkey or 2 roasting chickens (about 7 or 8 lbs.) cut into serving pieces 4 tbsps. vegetable shortening or lard 1 onion, chopped 2 cloves, garlic, chopped dash cloves, cinnamon, coriander a cup raisins 3 tomatoes, peeled and chopped 8 mulato chilis 6 ancho chilis 4 canned chipote chilis 2 squares bitter chocolate 1 tsp. sugar salt & pepper 1 cup almonds, blanched and lightly sauteed 4 tbsps. sesame seed METHOD Poach poultry, in salt water about :,i hour. Drain. Reserve liquid. Dry poultry and brown in shortening. Remove and keep warm. In blender, slowly puree the onion, garlic, spices, raisins, tomatoes, and all chilis. Cook in the poultry pan for about 5 minutes. Add 2 cups turkey stock, chocolate, sugar, salt and pepper. Cook until chocolate melts. Pour over poultry and cook l'i hours more at medium low heat. Sprinkle with sesame seed and almonds and serve. I mentioned before, Poulet Vallee D'Auge. It's one of my great favorites. It's from Normandy. France's apple country, so particularly appropriate for the time of year when apples and cider are the in aA TASTY BIRDS Cornish game hens served with wild rice make a nice change of pace holiday dinner for hostesses seeking originality. Wanderer Still (reserve giblets liver, heart, gizzard, neck for BROWN STOCK salt & pepper 1 carrot 1 sliced onion Sauce: 3 tbsps. granulated sugar 't cup wine vinegar IV, cups BROWN STOCK l'a tbsps. cornstarch, mixed with 3 tbsps. Port or Madeira two-thirds of the orange skin 2 jiggers orange curacao or Grand Mariner 2 tbsps. butter METHOD Cut the 3 orange skins into very thin (l-16th inch) strips. Simmer in water for 15 minutes. Remove and dry. Preheat oven to 450 degrees. Wash, dry and season duck with salt and pepper. Put 1-3 of the blanched orange skin slivers into the cavity and skewer up. Prick the skin. Place duck on rack in roasting pan with one cut-up carrot and one sliced onion. Roast about 1 hours first Vi hour at 450 degrees, then cut to 350. Remove fat occasionally with spoon or suction baster. Meantime . . . The sauce: Boil the sugar and vinegar for a few minutes; add the BROWN STOCK; beat in cornstarch and Port and stir in the orange peel. Cook 5 minutes and set aside. When the duck is finished cooking, pour off grease and At Wit's and put it in mah pocket. Lyndon saves candy wrappers.
