Sometimes in a market you eee a string of those golden eggs strung like a necklace. They are boiled In their own membraneous sac then dried In the sun and served. They taste a bit like soft cheese. Hollywood has glamorized the Iguana for years. Remember? It's the scary louklng prehistoric monster you see in grade "C" movies that is clawing at the hero trapped in a cave. An Iguana and Its southwestern United States cousin, the gila monster, or maybe a good old fashioned "blue belly" lizard make a swell monster fight when filmed close-up and cast in cinemascope. Richard Burton starred In "Night of the Iguana," a movie ' which helped snread the lizard's fearsome image. In that picture Mexican beach boys chased Iguanas up and down a hillside ' and readied them for the broiler. The Iguana's legs and the first full portion of his tail are edible. For that matter, they are required diet material at the U.S. Air Force's Southern Command Jungle Survival school in the Canal Zone. Of course, so are , boa constrictor and a weird assortment of other jungle anl-' mals, Including a large rodent. Gladys R. Graham offers several tasty Iguana recipes In her cookbook, "Tropical Cooking." They are: "Galloway's Iguana Therml-dor (serves six). 1 Iguana approx. 3 pounds cooked, skinned and boned. pound butter or margarine. yt cup flour. 4 med. onions, chopped culantro (approx. 3 blades). 1 cup mushroom pieces,, drained. 4 eggs. cup milk (2 cups cream). Black pepper to .taste. Salt to taste. y2 cup cup grated Parmesan cheese. 1 cup white sherry. Soft bread crumbs. "Cook Iguana In wataf without salt for one hour, remove from pan. Set aside to cool Just enough to handle. Pick meat from bones. Melt butter In sauce pan over low heat,, add onions and culantro and simmer until soft. Add flour, stirring constantly until smooth. Remove from heat. Add black pepper, mushrooms, thyme, salt and cheese. Blend, then add sherry. Place Iguana in baking dish, cover with mixture and top with bread crumbs. Bake at 320 de-' grees for 30 minutes." Though she tells how to skin the unhandsome lizard (boll the pieces or sear them and peel back the skin), Mrs. Graham emits a lesson. on,catchlng and , ' killing. Leaving catching to 'the" fleet of foot, you can then assume Iguanas are dispatched In the manner of chickens. Mrs. Graham also offers recipes for "Smothered Iguana," . "Iguana a la King" and a nice "IguanaPle.":Fartheoie: "Brown Iguana and cook fill tender. Bone, and add -with an assortment of nearly cooked carrots, chopped celery, etc., to a casserole. Top with small biscuits and bake at 409 degrees till the biscuits are done." Brandied Pork Roll BRANDIED PORKROLL 3 strips bacon 1 cup celery, chopped cup onion, chopped 2 cups water 1 cup apricots, glhrered Vt teaspoons seasoned salt Yi teaspoon pegper 4 drops tabasco teaspoon thyme cup apricot and brandy j liqueur 3 cups bread cubes 1 6-rib pork loin, boned and pocketed Fry bacon in 10-lnch skillet until crisp. Remove from fat and drain on paper towel. Add celery and onion to fat In skillet and cook until tender. Add water, apricots, seasoned salt, pepper, tabasco and thyme and cook for 15 minutes over moderate heat. Add '4-cup of tho apricot and bra idy. liqueur. Toss with brer-i cubes and let stand. M? .e lengthwise slash in pork, cutting to within one Inch of outer edge of the meat. Sprinkle outside of meat with more seasoned salt. Stuff pork with dressing. Skewer opening and tie roll with clean white cord. Place on sheet of aluminum foil large enough to allow for folding the lengthwise edges over the stuffed meat, leaving opposite ends open. Place la a 12x8x2-inch baking pan; Bake li 350-dcgree oven for three houn or until well done and tender when pierced with a fork. Open foil and pour over the remaining Vi-cup of apricot and brandy.
