That's why we select this unusual Medieval Shrimp recipe for your entertaining. It is a combination of shrimp, shallots (or seal-lions), beer and celery. The shrimp are cooked in the shell and served that way. The shallots and beer and celery are all part of the act too. Try Medieval Shrimp with either Dill Butter or Sherry Garlic Butter. Serve shrimp in a large bowl either hot or cold and have a great time. MEDIEVAL SHRIMP 3 pounds jumbo shrimp in the sheU 1 cup beer S scallions or shallots, chopped 2 cups chopped celery (tops Vi teaspoon almond extract V teaspoon salt V cup chopped toasted pecans 2 quarts vanilla ice cream Combine undrained pineapple with marshmallows, flavorings and salt Cook, stirring occasionally, over low heat until marshmallows melt Remove from heat Cool. Add nuts and chill. Line bottom and sides of chilled 7-cup mixing bowl with two-thirds of ice cream. Cover bowl with foil. Freeze overnight. When ready to serve, onmold on chilled plate. Decorate as desired with rosettes of tinted whipped cream, stemmed maraschino cherries and canned pineapple chunks. Eight to 10 servings. ' CHRISTMAS PINEAPPLE BOMBE 1 (1-pound, 4 Vi-ounce can crushed pineapple 3 cups miniature marshmallowj 1 teaspoon vanilla and all) Place shrimp in a deep saucepan. Add Beer. Strew top with scallions and celery. Cover; simmer 6 minutes or until shrimp are pink and tender. Serve hot or cold with dill butter or sherry garlic butter. It's surprising how a few sliced or chopped nuts stirred into or sprinkled on top of a casserole, or buttered vegetables gives a touch of elegance and makes it taste so much better. This is particularly true when the nuts are toasted filberts. These are those round, brown-skinned nuts that are frequently called hazelnuts. Gradually add milk and wine. Cook, stirring constantly, until sauce boils 1 minute. Add tuna and Vi cup of the filberts. Arrange broccoli in a heat-proof platter or a shallow 2-quart casserole. Pour tuna sauce over broccoli and sprinkle cheese and remaining filberts on top. Lay strips of foil over any exposed broccoli and bake in 375 degree (moderate) oven 15 to 20 minutes, or until Isauce is bubbling. To toast filberts: Spread filberts in shallow pan and bake in 400 degree (hot) oven 10 to 15 minutes, stirring occasionally. TUNA SPAGHETTI TOSS (Makes 8 servings) 2 tablespoons salt i to 6 quarts boiling water 1 pound spaghetti 1-3 cup butter or margarine Vt cup chopped filberts (about 2 ounces) 1 medium green pepper, diced 1 medium onion, chopped 1 clove garlic, crushed Vi cup flour 1 Vi teaspoons seasoned salt 1 teaspoon celery salt 1-3 teaspoon crushed thyme 'ft teaspoon pepper 2 cups milk 2 cans (6Vi or 7 ounces each) tuna, drained 1 cup (8 ounces) creamed cottage cheese 3 tablespoons chopped parsley (optional) Add 2 tablespoons salt to rapidly boiling water. Gradually add spaghetti so that water continues to boil. Cook uncovered, stirring occasionally until tender. Drain in colander. Melt butter in large saucepan; add filberts and stir over medium heat until brown. Remove filberts and set aside. Add green pepper, onion and garlic to butter in saucepan. ' Cook over low heat until tender. Blend in flour and seasonings. Gradually add milk; stir over medium heat until sauce boils 2 to 3 minutes. Mix in tuna and cottage cheese; beat thoroughly and toss with spaghetti. Turn into serving dish and sprinkle filberts and parsely on top. Serve at once. Persimmon Tip When persimmons are fully ripe they are soft, juicy, and sweet without any astringent taste. To preserve this peak flavor for out-of-season desserts and molded salads, freeze pulp with sugar, mixing in Vi as much sugar as sieved persimmon pulp. Use in 3 different sizes.
