Nov. 21, 1968 Yams Are A Part Of Our Thanksgiving Tradition until hot. about S degrees F. minutes. i ? f 1 The people of the United States owe a great deal to the American Indian for introducing them to two foods which have been served at holiday tables for hundreds of years . . . turkey and sweet potatoes. Mere are some new yam recipes. Knjoy them at your holiday dinner and throughout the year. Combine 2-3 cup liquid, sugar, salt, butter and cloves in 1-qt. top-of-stove casserole. Place over moderate heat, stirring until sugar dissolves and mixture boils. Boil until syrup is thick, about 5 minutes. Arrange yams, apple slices and raisins on top of syrup. Cook over moderate heat until syrup bubbles and yams are hot. about 5 minutes. Serve in individual small bowls. Or bake in very hot oven 500 N. If 1 ORANGE-CANDIED SWEET POTATOES l4 cup brown sugar U cup orange juice 2 tablespoons butter or margarine '4 teaspoon salt ' teaspoon cinnamon G rated peel of one orange 1 No. 24 can sweet potatoes, well drained In large saucepan combine brown sugar, orange juice, butter or margarine, salt, cinnamon and orange peel. Simmer for 5 minutes. Add sweet potatoes. Cook over low heat until the potatoes are hot and well glazed. Garnish with thin slices of orange if desired. The preparation trick involves parboiling the yams, then slicing them to the right thickness. After that a syrup is prepared in a big skillet and the yam slices are carefully arranged in it.
