It's easy to tell when fish is ready. Raw fish has a watery, translucent look, which changes In cooking to an opaque, whitish tint. When the thickest part takes on this tint, the fish Is done. The flesh then easily separates Into flakes, and any bones present will come away readily. Handle your fish as little and as gently as possible during and after cooking, since most cooked fish tend to break up easilv. BAKED HALIBUT STEAKS 1 pounds halibut fillets or steaks, fresh or frozen 2 tablespoons melted fat or oil 2 tablespoons lemon juice 1 teaspoon salt teaspoon paprika Dash pepper Cut fish into 6 portions. Place fish in a single layer, skin side down, in a well-greased baking dish. 12x 8 x 2 inches. Combine remaining Ingredients and mix well. Pour sauce over fish.
