Post and Times, Thursday, Nov. 14, 19HH-FX3 Spicy Praline Coffee Cake For Special Breakfast There Is nothing like a leisurely breakfast when there is time to relax and savor unhurriedly the good things of the table. And there is nothing like this praline coffee cake as a . bread to savor. Served warm from the oven to adorn with butter, every morsel is a taste-treat. The dough for this handsome coffee ring is of the quick-bread variety and easy to prepare. Because of Its copious size, it takes about an hour to bake. However, it can be baked ahead, then cradled in aluminum foil for re-heating just prior to service. As with other breads, leave a small opening in the foil wrap for steam to escape during heating so it remains moist but not soggy. The butter-rich dough is fruited with raisins or currants, good in Itself. But there's a triple measure of the praline mixture on the bottom, in the middle and on top to triple eating pleasure! Evaporated milk, double-rich from the can, acidified with lemon juice, adds Its special richness to the dough, influencing tenderness of crumb and golden brown crust in the ( baking. The praline mixture for layering the dough is a blend of brown sugar, flour, butter and chopped pecans with a spicing of cinnamon for new flavor Interest. PRALINE COFFEE CAKE 1-H cups firmly packed light brown sugar y4 cup sifted regular all-purpose flour 3 teaspoons cinnamon Vt cup (1 stick) butter H cup finely chopped pecans 3 cups sifted regular all-purpose flour 2 teaspoons baking powder Vt teaspoon soda 1 teaspoon salt 1 tablespoon lemon juice 1 cup evaporated milk '-i cup (1 stick) butter cup sugar 3 eggs 1 teaspoon vanilla extract 1 cup raisins or currants To prepare praline mixture: blend together brown sugar, cup flour, cinnamon; cut in Vj cup butter until mixture is crumbly. Stir in pecans; set mixture aside. To prepare dough: sift together the 3 cups flour with baking powder, soda and salt. Stir lemon juice into evaporated milk. Cream butter and cup sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla. Add flour mixture and evaporated milk alternately to egg mixture, beating well after each addition. Fold In raisins or currants. Sprinkle about a third of the praline mixture into the bottom of a well-greased 10-Inch tube pan; cover with half the batter mixture; sprinkle with another third of the praline mixture; cover with remaining batter mixture; then sprinkle remaining praline mixture over batter and press in gently. Bake in preheated moderate oven (360 degrees F.) until done, about 50 to 60 minutes. Let stand in pan 10 minutes, then remove from pan. Serve warm or cold.
