Upside Down Kugel Va cup sugar 2 cups creamed cottage cheese 2 apples, peeled and chopped (about 3 cups) Vi cup raisins Combine brown sugar with 2 tablespoons melted butter. Press onto bottom of greased 10-inch tube pan. Combine remaining 2 tablespoons melted butter with drained noodles. Beat egg whites with salt in small mixer bowl until foamy. Gradually add sugar, beating until stiff but not dry, or just until whites no longer slip when bowl is tilted; set aside. In large bowl combine cottage cheese with egg yolks; beat well. Stir in noodles, apples and raisins. Gently fold egg whites into egg yolk-noodle mixture. Pour into pan and bake in preheated 275 oven 50-55 minutes or until knife inserted near center comes out clean. Remove from oven, cool in pan on wire rack for 10 minutes. Loosen edges with spatula; turn out onto serving platter. Makes 10-12 dessert servings. What is the origin of Jewish cooking?
