Chili Days Chili powder is an aromatic spice blend created from a fruit (a chili pepper pod), a leaf (orega-no), a bulb (garlic, and sometimes onion), a mineral (salt) and a seed (cumin). Other spices such as allspice and cloves are often added. Classic Texas chili is prepared the way chili purists like it, with beef stew meat cut in cubes, garlic, chili powder and white cornmeal as a thickener. Hot pepper sauce adds the warm flavor chili buffs expect. Walter Jetton, barbecue caterer to the LB J Ranch, adds ground suet to his favorite chili. Jetton uses lean beef, ground coarse, rather than the stew meat. California Chili is made with regular ground beef, onions, green pepper, canned red kidney beans, tomatoes and plenty of seasonings. Instant coffee powder is added to the pot for a rich flavor and color, but this is optional. Turn to CHILI F9 Those errands of love that keep us so busy during the weeks before Christmas don't leave much time for cooking. Chili is a family-pleaser that's easy to prepare and easy to serve at the table or buffet style. Keep it warm in the crock-pot or on a warming tray for those members of the house who might work or shop late. And because chili and the go-withs rice and beans, sliced avocados and a big tossed green salad - can be prepared in advance, the cook can be late too, or even absent. Chili is a true American dish that is said to have originated in Texas, although it seems every southwestern state wants credit for inventing it. Supposedly, chili powder as a spice blend was invented less than a century ago in the Southwest by an Englishman who was simply doing in Texas what his countrymen had done in India when they invented curry powder.
